Making Crispy Onion Rings

Reviewed: Aug. 14, 2012
Very crispy and crunchy. I tested a couple pieces of shrimp along with the onion rings and they tasted great as well. I'll use this batter as a base for other things as well. Tastes great with ketchup or sweet chili sauce.

Chef John's Sausage & Shrimp Jambalaya

Reviewed: Aug. 3, 2012
I added an extra tomato and cut down the chicken stock to 70ml. I followed the advice of another reviewer and added precooked brown rice to cut down on the cooking time. Overall, a quick and delicious dish!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jul. 30, 2012
These came out chewy and were pretty good. It was my first time baking oatmeal cookies. I followed the advice of other reviewers and increased the portion of baking soda and flour. I also used applesauce in place of half of the butter and omitted 30g of sugar since I did a batch with raisins and the other with dark chocolate chips. I find that the addition of fruit or chocolate allows me to reduce the sugar called for in a recipe, but this is a personal preference.

Cherry Pie with Almond Crumb Topping

Reviewed: Jul. 29, 2012
This is a very easy and delicious recipe to make. Perfect during the summer when ripe cherries are on sale! The almond crumble is crunchy and is the perfect complement to the soft cherries. I learned a tip from a French baker: if you want to add less sugar to a recipe you can reduce it by 30g without drastically changing the flavor. That's what I did and it was the perfect amount of sweetness since my cherries were already naturally sweet.

Simple Garlic Shrimp

Reviewed: Jul. 16, 2012
This was my first time cooking shrimp and it was very easy and fast. I didn't have caper brine or red pepper flakes. I added freshly ground pepper as well as mushrooms and topped it over some buttered spaghetti noodles. (Very easy to add your favorite ingredients.) I will definitely be making this again. My boyfriend loved it as well. Proof that all you need is a few fresh ingredients to make great tasting food.
