Summerly Squash

I usually don't like cooked squash because of how mushy it can get, but a thicker slice seemed to help maintain some crunch. The flavors were to die for, and I used a shallot instead of a regular onion to give it a stronger onion flavor. I also cooked it in coconut oil and used a no salt seasoning plus the pepper and salt. It was the best cooked squash recipe I have tasted ever!

Simple Turkey Chili

My family loves the leftover dinners I make with the turkey and ham from the holidays. I used leftover turkey (mostly the white meat) instead of ground turkey, and pinto beans instead of kidney beans. I also added some canned corn. The seasonings were great, adding just enough zing to be a spicy but not so hot as to make it inedible. It was a bit soupy at first, but thickened up as I put it in the crockpot on low after throwing it together. Thanks for a great meal!
