Four Cheese Macaroni

Banana Banana Bread

Got rave reviews from several friends when I brought this two functions: a t-ball game and an early morning pot luck. I add a 1/2 tsp of cinnamon. My very picky 4 year old loves it! Instead of making a loaf I made it into mini muffins. Baked for 20-25 minutes for a tray of 24 muffins and it yields about 54 mini-muffins, give or take a few. Awesome recipe. Very banana-y. Thanks!

E-A-G-L-E-S Swirl Sandwich

Left out the garlic and made more of the onion and mushroom mix than it called for because my pizza crust came in a 13 oz size, and I wanted plenty of veggies. It was awesome and my Eagles fan hubby loved it too. Even my 5 year old liked it and he hates anything with meat in it.

Firecracker Fried Chicken Drumsticks

Banana Crumb Muffins

Simple Baked Beans

This is so similar to baked beans that my mother-in-law used to make. I think the ingredients are the same but the way she made them was different. She cooked the bacon first and added that crumbled up to the beans instead of on top. Then she'd cook the onions in the bacon fat until they were clear. Then add the cooked onions and everything else to the beans and cook for a much shorter time in the oven. An hour or maybe less. That's how I've been making them and they're fantastic! Excellent, easy, fast recipe for baked beans: the way they were meant to be. Thanks for this recipe!

Lime Chicken Soft Tacos

We thought this was fantastic even though I didn't follow the recipe to the letter. I used one whole lime (next time will use 2), jarred garlic instead of fresh and double the green onions. I marinated the chicken an hour ahead of time and then cooked it all together. My husband loved and I both loved it.

Tomato Enchilada Bake

Wow, this turned out so much better than I ever expected it to. To the filling, I added a couple of spoonfuls of canned, chopped jalapenos and some chopped olives. I think next time I'll also add some cheese to the filling but that's just because I like my enchilada's really cheesy. I didn't have any cooked chicken around so I took someone's suggestion here and cooked about a pound and 1/4 of chicken breast meat with some of the canned tomatoes and all of the chopped onions. Turned out to be exactly 3 cups worth of chicken and it made the meat a little more tender in my opinion and melded the flavors together wonderfully. My husband even took some of the leftovers to work the next day and he NEVER eats leftovers. Ever. Great recipe. Will absolutely make this again.

Chicken Enchiladas I

Made these but unfortunately did not read the reviews first. Do not add the 1/2 cup water. That makes the whole thing too runny and made it hard to roll the enchiladas without everything pouring out. I suggest using smaller than 10" tortillas. I couldn't fit 8 in a 9"x13" pan because they wouldn't fit sideways. I think an 8" tortilla would be perfect. I made the Enchilada Sauce also found on this website instead of taco sauce and that turned out good but made the entire thing too much for me. I probably won't make these again, but only because it was too much effort.

Enchilada Sauce

This sauce was good and probably very authentic but it didn't really thicken up like it was supposed to until it was cooking and even then it didn't get very thick. In addition, it took a lot longer than anticipated, primarily with the pepper preparations, toasting, soaking, scraping. Turned out fine just didn't seem worth the effort.

Chocolate Cavity Maker Cake

Made this for my husbands boss and family and it was a big hit. They claimed it was the best chocolate cake they'd ever had and called later for the recipe. I used cocoa to flour the pan but other than that I did everything as the recipe said. Turned out fantastic. Will definately make this again.
