Banana Banana Bread
My son loved it! I used five overly ripe bananas plus a sixth just-ripe banana to get to 2 1/3 cups, and cooked for about 75-77 minutes. The bread turned out moist inside with a nice outer crust and great banana flavor! I was certain not to over stir the dough which was key to the consistency. Oh...I did add 1/4 tsp each nutmeg and cinnamon, and my brown sugar was dark, but the recipe as is worked just fine. Definitely a keeper!

Eggplant Parmesan For the Slow Cooker
This was a huge hit! Made it exactly as written, but I really only needed three eggplant for my cooker. On low for 4-5 hours was perfect. I will try it without frying as someone else did, but loved the finished product!

Cottage Meatloaf
This will be my staple recipe for meatloaf! I love the glaze and only made a few changes to the recipe...I didn't use the foil because I used Corningware; altered the 1/2 cup ketchup to ketchup/57 Sauce; added a little garlic powder (forgot I had a fresh one on hand), Mrs. Dash and red pepper flakes. I also used 1/2 Ritz crackers and 1/2 Italian bread crumbs and tomato cocktail instead of juice, and baked for an hour instead of 45 mins. Love it!!
