After reading everyone's suggestions, I came up with a collaboration of ideas. I left out the carrot, potato, sweet potato and celery. I cut up a medium squash and roasted the pieces in the oven at 400 for 1hr. Along with the squash, I roasted some garlic gloves. I used the garlic infused olive oil from the roasted garlic to sate the onions in. I added the ckn stock and garlic and blended the whole thing w/ a hand mixer and left some of it chunky for texture. I added yellow curry powder, nutmeg, and red pepper flakes...thanks to those who suggested those wonderful tips!
