Buttermilk Oatmeal Pancakes

Love these pancakes! This was my first attempt at oatmeal or buttermilk pancakes and I loved the flavor and texture. The third time I tried this recipe I had run out of rolled oats and used steel-cut oats instead. This didn't turn out well because of the longer cooking time that steel cut oats require. I even tried softening the buttermilk/oat mixture in the microwave for 7 minutes at 50% power but the oats were still chewy. I will still love them though. I freeze the extra pancakes and they make a great, quick breakfast in the toaster oven every morning.

Scalloped Cabbage with Ham and Cheese

Loved this! I've been trying to find new ways to enjoy cabbage, and this was a winner. Only thing I did differently was to add garlic powder to the cheese sauce, and used shredded sharp cheddar and shredded mozzarella instead of processed cheese. Wonderful!

Swiss Chicken Casserole II

This is a great basic recipe! I have made it a few times and tweaked it a little bit: I brown the chicken first to add flavor, and add a few carmelized onion slices and top everything off with a little Rosemary before popping in the over. Tonight I have a few leftover baby Bella mushrooms I'm going to slice up and saute to add to the mix. Note: if you're browning the chicken first, you might want to cut back on the total cooking time.

Ginger Mushroom Chicken

This was okay, but needed something extra. I substituted baby carrots for snow peas, and canned button mushrooms for the portobellos. I love ginger and was hoping for something with a little more flavor.

Chicken Scallopini

This is very good, however I found it to be a little too salty. I did not add any salt while cooking, and I used low-sodium chicken broth to make the demi-glace. Could be that I used canned mushrooms, instead of fresh. Otherwise, very good!
