Potato Waffles
When my husband saw me fire up the waffle maker, he had his mouth set for butter and maple syrup, so these waffles took him by surprise! I had sour cream and chive instant mashed potatoes in my pantry. I mixed those up according to package directions and then just added the flour and eggs in this recipe. The waffles couldn't have been simpler and were very tasty served topped with shredded Cheddar, plain yogurt, and a sprinkling of chopped green onions. I will definitely make these again.

Watermelon and Strawberry Lemonade
I had a tasteless watermelon that wasn't worth eating, but I hated to just throw it away. This recipe was the answer to my problem. I followed other reviewers' suggestions to cut the sugar in half and replace half the lemon juice with lime juice. I expected the recipe to turn out slushy, but it was liquidy without straining. I'm sure this refreshing drink will be even better when made with a good watermelon!

Oven Roasted Hominy
I love corn nuts and was very interested in trying this recipe. Unfortunately, it did not turn out AT ALL. A number of the kernels popped during baking and ended up laying all over my oven floor. The seasonings turned into a charred black coating. That said, I still gave this recipe two stars instead of a flat zero. I'm hoping the main problem was the high oven temperature. When I roast pumpkin seeds, I use a 250 degree oven. I think I'm going to try the hominy on that temperature and see if I get better results. If so, I'll post again and let you know!
