Lentils and Rice with Fried Onions (Mujadarrah)
So easy and yummy! I've never made lentils before, but I loved this recipe. Even my toddler loved it (shocking!). After seeing some other reviews, I decided to season the water. I didn't have cumin on hand, so I used a splash of taco seasoning (I know, doesn't exactly go with middle eastern food, but it worked). I also cooked in homemade chicken stock instead of water for flavor (and added health benefits). Topped with a dallop of plain yogurt and served it up for lunch w/ a side of steamed veggies. Will definitely made this one again (it makes a ton, so I had lots of leftovers. I will have to fry more onions, though, this definitely wasn't enough for us).

Simple Whole Wheat Bread
Great, fluffy wheat bread similar to white bread in texture. This is sweeter (I would call it "honey wheat"), so if you don't want a sweeter bread, I wouldn't recommend it. I halved the recipe and made one loaf. I used all wheat bread (wheat pastry bread), so I added gluten (4 tsp), since white flour contains gluten which helps bread rise, and yeast does not usually contain gluten on its own. I also used a bread machine for some of the work. The first "mixing" I did in the bread machine bowl by hand, after it rose for the half hour, I turned my bread maker on to "dough" to let it kneed and rise. I then took it out, put it in a greased pan, let it rise again, and baked it. Made an easy recipe even easier (and less messy). Next time, I will try using half stone ground wheat (more texture) and maybe adding some seeds or oats for even more texture.

Delicious and easy recipe...I used it as a dip w/ baby carrots and sliced cucumber. For those who don't have tahini: I didn't want to make a run to the store, so I ground sesame seeds into a powder in my coffee grinder and then mixed in olive oil until it was a syrupy texture. I substituted this for tahini...came out great!
