Strawberry Jam
DELICIOUS!!! I frequently double this recipe! I always cut the sugar down (usually by about half) because the berries have such a delicious natural sweetness to them and the original recipe is too sweet. I tend to stir for about 45 minutes at a slight simmer...this slow cooking process gives it a wonderful natural jam-like consistency. The berries and lemon need lots of time to create a proper pectin. It really is worth the extra time! :) Perfect to give as gifts!!!

Sangria! Sangria!
SO DELISH!!! I followed the recipe ALMOST exactly (will get to that in a bit). I doubled this recipe and it was SUCH A HIT at my 'Fiesta' themed party! Now, for the adjustments/additions I made. In reading other reviews, I adjusted as follows: I used an entire frozen lemonade container (tube). I did not add any fruits (no sliced lemon, no sliced lime, etc) until it had been marinating in the fridge for about 12 hours. Then 4 hours before serving, I added diced apple (1 red, 1 green), diced strawberries, diced lemon, diced lime, and blackberries. Instead of carbonated water, as I poured each drink I topped it off with a little Ginger Ale (in some cases I used Fresca, which was my personal favorite) and put a few extra blackberries and diced apples as a garnish. It was light, refreshing, and DELICIOUS!! I HIGHLY RECOMMEND this recipe!!! :)

Spicy Shrimp Creole
Very, Very yummy - but if you follow the directions exactly, it's very, very spicy. That was good for some members of my family, but far too much for me. I fixed it by adding 1/2 a tablespoon of plain greek yogurt (or you could use sour cream) to my personal portion. Worked beautifully. Made the dish deliciously mild (which is my preference). Everyone else LOVED the spice it's really about personal preference. Also - we used two cut up chicken breasts and two spicy sausage links (sliced) for the meat and it was sooo good!
