Baked Omelet Squares

Made this for my family today and used leftovers from the week to help clean out my fridge. I added boiled potatoes (cubed), mashed potatoes, and ham in layers on top of the Tex-Mex cheese bottom. I also added a layer of chunky salsa for a little zip. To my egg mixture, I added salt & pepper as well as some dill. I baked it for 20 minutes at 350 added more cheese to the top and continued baking for an additional 15-20 minutes. We all loved it and it is definitely a recipe that I will make often - easy peasy to make and a great way to use up leftovers at the end of the week. Thanks for sharing - definitely two thumbs up from our house!!!

Yummy Sweet Potato Casserole

This is delicious - my family was looking for the whipped topping as they said it was good enough to be a dessert!! I used brown sugar instead of white and evaporated milk instead of regular. Will definitely be making this again & again!! Thanks for sharing!!

Love this - great way to take care of those apples that have been sitting around for a while. The house smells heavenly while this is cooking too!! Delicious!

Cucumber and Olive Appetizers

These were a big hit - very quick and easy to make. I alternated the olive with a thin slice of gherkin for those who don't like olives. Delicious!!
