Morning Glory Muffins I

Great for my one-year-old! These are even better than I thought they would be! I made them without raisins or walnuts (but still used the wheat germ on top) so I could freeze them for my one-year old. An easy thing to pack for his lunches at daycare! The only reason I gave them 4 stars instead of 5 is because the clean-up is a pain - anything that involves the food processor is annoying to me. Next time I make them, I will make a double batch.

Oatmeal Peanut Butter Cookies

Great peanut butter cookie! I like my peanut butter cookies soft and chewy, not crunchy, but still with flavor. This one hit the spot! I will definitely be saving this recipe. They are a bit salty, so I might try reducing the salt and increasing the oatmeal next time. Chocolate chips as others have mentioned would be good as well. Thank you for a great recipe!

Granola Bars III

These are quite good. I substitute 1/3 cup all-purpose flour, 1/3 cup whole wheat flour, and 1/3 cup almond meal for the 1 cup of flour. My favorite combo is craisins, slivered almonds, and white chocolate chips. Perfect to take to work for lunch. My only problem is that sometimes I can't wait until lunch to eat them!

Buttermilk Pancakes II

These were delicious. Really light and fluffy. I made them just like the recipe says and they disappeared. The recipe does make a lot - I made 1/3 of the recipe and it was more than enough for my husband and I. Now, what to do with all that leftover buttermilk.....

Spinach and Potato Frittata

This is a great base recipe. I would be sure to add plenty of salt and pepper. Also add some dried herbs (I used an "egg and vegetable mix" from our farmer's market) and a good bit of hot sauce to the egg mix. I substituted red pepper for the green onion - just used what I had. Though, I think the green onion would be good too. I also used frozen spinach and it worked well. It took longer than the 5-7 minutes for my eggs to get firm at the end.

Roasted Garlic Mashed Potatoes

I really wanted these potatoes to be good, but they are definitely bland. I nearly doubled the garlic and still couldn't taste it. I think the 45 minutes is way too long to cook it. I also probably tripled the cheese, and doubled the butter, salt, and pepper. I just kept adding cheese and salt and pepper until they were good. I only used a couple tablespoons of milk and wouldn't add any more. I like the idea of garlic and parm together, but I could have done it better myself by trial and error.
