This recipe and associated video series were absolutely perfect. Covering the breast till the end allowed the dark meat to be done at the same as the white. Everything was very moist. The gravy came out perfect and was sumptuous! The only change I made was to mix the outside portion of the herb seasoning in an olive oil+butter mixture and then I used a brush to coat the bird. I'm a single dad, my kids said it was the best Turkey they ever had ... 'nough said!
