Mom's Zucchini Bread

This is my second time making this recipe this summer. It is simple & easy to personalize. I used applesauce instead of oil, half brown sugar & half white, & used 1/3 each quick oats, wheat flour & white flour. It was perfectly sweet without adding any sugar on top. Really good hot out of the oven with butter. That's how bread should be!

Double Layer Pumpkin Cheesecake

This was delicious, but the pumpkin layer didn't turn out as firm as the plain layer. It was my first cheesecake, though. So hopefully it'll turn out better next time.

Apple Oatmeal Crisp

i made this for a big super bowl party & they cleaned the dish! it's very simple. i doubled the whole thing for the big 9x13 dish i used. then i doubled (so 4x) the topping like the other reviews suggested. i added the rest of my chopped pecans (3/4c-ish) to the oat topping. & i added the rest of my craisins (~1c) to the apples. i also extra doubled the cinnamon by mistake... but it was great. i used 3 kinds of apples. i would use some more apples next time. it took about 75 min to bake cause it was so much bigger. i just poked it til the apples felt right. this was a fun recipe - like i couldn't mess it up if i tried! i'm passing the recipe along by request!

Peach Pie the Old Fashioned Two Crust Way

This was delicious! & the first time I ever made peach pie. However, I used half dark brown sugar & it reminded me of pecan pie (my favorite). Very good with fresh peaches - you can still feel the texture of the skin.
