Chewy Chocolate Chip Oatmeal Cookies

These are very good cookies! I used butter-flavor Crisco only because I had some I needed to use, and left out the walnuts because I don't like them. Other than that I followed the recipe to the letter and ended up with cookies that were crispy on the outside and chewy on the inside. YUM!

Baked Chicken Nuggets

What an easy recipe! I took the suggestions from other reviewers and used milk instead of melted butter, and baked the nuggets on a cooling rack over a cookie sheet. I could probably have coated another one or two breasts with the batter. The only change I will make next time is to use half the amount of salt listed. Thanks for an easy recipe to jazz up otherwise boring chicken!

Meatloaf

This is more like a 4.5 rating. Not quite a 5 because I had to make modifications. I cut this recipe in half, omitted the tomato soup and added salt and pepper. Even so it was a bit runny but cooked great. It was crumbly coming out of the pan, however. I liked the chewiness of the oatmeal but will either reduce the amount by about a third or substitute bread crumbs next time to see how that works. This is a really "classic" meatloaf taste and might be even better with a bit of chopped green pepper.

Hamburger Vegetable Soup

Like everyone else, I modified this to suit our tastes. I used chicken stock in stead of broth, and also included the celery leaves. I only used half an onion and (1) 2-oz. pkg. of onion soup mix. Didn't have any frozen veggies on hand so I added a can each of corn, green beans, and rinsed kidney beans. I also didn't have elbow macaroni, so I broke up some angel hair pasta. In addition, I seasoned the beef with pepper, sea salt, and a bit of seasoned salt and did not drain it as there wasn't much fat. I also added garlic powder and a bay leaf to the mixture as it boiled. This is hearty and very quick and easy to make. Tastes great with some buttered 7-grain bread.

Zesty Slow Cooker Chicken Barbecue

Wonderful and so easy! I used whole chicken breasts (3) and shredded one hour prior to serving. I used a barbecue sauce that isn't sweet - Gates - so next time I will actually add just a bit more brown sugar. This is a great thing to make when you don't want to heat up the kitchen during the summer - thanks!

Mexican Rice

This is a great, easy recipe! I too left out the cilantro. I used a can of corn, drained, in lieu of fresh corn. Instead of garlic powder I minced a couple cloves of fresh garlic and sauteed it along with the onions in the beef. We had ours served with tortilla chips. Next time I'd like to substitute some of the meat for black beans. Great taste and so simple! TIP* Make sure to turn the heat down after you cover the pot to cook the rice!

Make Ahead Lunch Wraps

FABULOUS! I added some shredded cheddar jack and halved the recipe - it still makes a TON. I browned the wraps in a bit of olive oil to get the cheese melted and served with a dollop of light sour cream. These will become a favorite in my house.
