About this Cook
My name is Joy and I live in western Massachusetts with my husband Chris and our monstrous pup, Kota. We moved here from New Haven in 2006 and married in '07. I'm a therapist at a community mental health clinic in a small city, and when I get home, I'm usually beat (especially on my outreach days). But I must say, Allrecipes has helped me come a long way from the mainly pasta dishes I was serving that first year!
My favorite things to cook
I'm a fall baby and I love all the tastes of autumn in New England. Before the leaves even turn I'm already psyched for baking pies and roasting squash. I love incorporating orchard fruits and cranberries into my entrees, too. I've had the most fun taking recipes from the site and (since I don't usually have every single ingredient on hand)I love making them my own.
My cooking triumphs
One evening my brother in law came over when I made a chicken pot pie from the site. He's one of those people that can't stand it when one food touches another on his plate, so obviously hesitant about the pot pie. We were in the car on the way to the house when I offered to make something else, and my husband said to his brother, "trust me, you'll like it... it totally blows mom's pot pie away." Seeing my husband go for seconds and thirds of my cooking is when I feel most accomplished, especially coming from mostly pasta/jar sauce dinners when we first moved in!

Baked Pork Chops I
Husband loved it, I found it a bit salty. Easy enough to fix, we both really enjoyed it anyhow. Served with mashed apple potatoes and parm-crusted greenbeans.

Apple Glazed Pork Tenderloin
Like many others I was hesitant to make this dish based on the ingredients. My husband loved it, and so did I. I ended up adding a more coarsely chopped vidalia onion, and I added an extra apple (Braeburn). Next time I think I will add more wine to the broth/glaze-- but I omited the apple butter and balsamic, which def made it drier. We loved it this way, but will make sure to try it with the ab and bv.
