Quick and Almost-Professional Buttercream Icing

Really nice crusting buttercream recipe - you just need to TRIPLE this at least in order to decorate a cake!!!!!!! This icing was delicious because of the butter in it. I doubled this recipe and could barely coat a 9x13 inch cake. I wish I would have tripled it but I ran out of butter!!!!

Banana Crumb Muffins

I made my own applesauce and replaced the butter in the muffins (not in the crumble topping) with it. They turned out fabulous with a lot less fat and my guests loved them

Baked Ziti I

I made this easy recipe for a party and it was a huge hit! I recommend what others have done, and that's to stir up the bottom layer with the sauce so that the noodles are integrated in the sauce. Also make sure you cover it with tin foil. You can make this ahead and put it in the fridge until you are ready to make it in the oven - just be aware that if the foil touches the cheese that the foil will rip it right off the top!! So make a "tent" of foil over the top of the pan so that the foil isn't lying directly on top of your ziti! I used fake meat for a vegetarian spin. Boca crumbles work fantastic as well as the fake meatballs all mashed up :)

Vegetarian Gravy

This gravy is the best vegetarian gravy I have ever tasted. We use this instead of the Tofurky gravy that comes in the box because this one is creamier and much more delicious! Definitely a staple in my cookbook!

Texas Spoon Bread

I had never heard of spoon bread before but I read that it goes well with black eyed peas. So for new years I made this recipe as stated. It turned out fantastic!!! It reminds me of a bread pudding like consistency, with a bit of a sweet and salty flavoring. It was a huge hit. Others kept singing to the stone temple pilots song: "Spoon Man" replaced with the lyrics "Spoon Bread" while eating it. I will definitely make this again!

Best Buttercream Frosting

My grandmother's recipe is almost the same, and it's AMAZING. Tips to make this work: 1. Use 5 Tbs of Flour 2. You need to cook that flour and milk until it's the consistency of brownie batter. I stir and stir and stir until it's difficult to stir anymore!!! 3. Beat the hell out of the butter and sugar until the sugar is barely recognizable anymore. I am talking kitchenaid med-high speed for about 8-10 minutes. Stop to scrape down every now and then. This is essential to get a smooth consistency and no crunchy sugar! And this is all before adding the vanilla. Make sure it's creamed properly before doing so. 4. Beat the entire thing together until it's fluffy. That means don't turn off the machine until you have fluffy wonderful creamy consistency of icing. It looks like it's separated in the beginning, it's okay, just keep mixing and mixing and mixing. I promise it will eventually all blend together!!!

Simple White Cake

This cake was pretty good, but very dense! I had to use the only cake pan I own, which is a 9x13 inch pan. This will make a thin cake in a 9x13 inch pan so definitely increase the recipe size! Overall the flavor is really buttery much like a pound cake!

Paprika Mushrooms

I have made other paprika mushroom recipes and this one was not nearly as tasty. It turned out watery and a bit uneventful. We prefer a cream based sauce to this one. I had replaced chicken broth with vegetable broth for a vegetarian version.
