About this Cook
Hey ya'll!! I'm a working mommy/wife/singer/actress! Whewww!! I value my spare time and have recently found a knack for baking & making homemade pizza...still working on the whole "cooking" part, sometimes I can be a disaster klutz in the kitchen LOL! =) However; my potato salad is legendary and I will never give up my secret ;) Dominican cuisine makes my heart super happy....but German food is a close 2nd. I'm not big on ice cream though....
My favorite things to cook
I love making cheesecakes! My favorite is my double layer pumpkin cheesecake. My Nutella cheesecake squares are so good too. I'm a sucker for apple pie, yum. I love using my slow cooker- wish I lived somewhere colder so I could appreciate a slow cooked pot roast even more LOL! I'm going to start venturing into making cookies & more kid friendly dessert now that my little girl is in Pre-K- I want her to have the "cool mom" LOL!
My favorite family cooking traditions
Fried queso blanco!! It's as delicioso & fattening as it sounds LOL! Christmas Eve is my night to show off- honey baked ham, potato salad, steamed green beans, 2 types of desserts, the whole nine yards...I'm pretty young, sorta, LOL, so my family cooking traditions are being made NOW =)
My cooking triumphs
Every single dessert I've attempted I'm been truimphant! It really is relaxing to me...When I made homemade spaetzle w/mushroom sauce, I even impressed myself!!
My cooking tragedies
Rice, Rice, Rice. Someone help me LOL!

Mediterranean Stuffed Chicken
BEST RECIPE EVER!! i did tweak it up big- seasoning my chicken w/salt and pepper first. then i used cream cheese, feta cheese, garlic powder, 1/4 cup shredded mozzerella cheese & 1 tablespoon steamed/drained spinach. i spread the filling and then rolled each chicken breast up using toothpicks to secure. dipped in melted butter and coated with mix 1/2season breadcrumbs 1/2 parm cheese. baked @ 350 degrees for 40 min. or until golden. so juicy & delicious and pretty easy! will make again for sure!!

Christmas Breakfast Sausage Casserole
soooo great! new christmas morning tradition! i used maple flavored jimmy dean pork sausage and a little less than half a crusty french baguette cubed instead of toasted white bread. i omitted the mustard powder. big hit with both my husband and my little picky 4 year old eater~ thanks for this recipe!!
