Double Chocolate Brownie Cake

Yumm! Now thats a good cake. Will make for may years to come. I used Satiny Chocolate Glaze to frost and sprinkled a few chopped pecans on top.

Eclairs II

Yumm! These are fun to make. I just used a spoon to place the dough on the baking sheet. I tried the frosting recipe from suz review on 4 of them and it did not work out at all for me. I ended up making my own boiled chocolate frosting/glaze and wow what a difference. I used vanilla pudding and cool whip for the filling since that is what I had on hand. They are so pretty, check out my picture. I am going to make them to take to work for a birthday celebration this week.

Busy Day Barbeque Brisket

Wow what a great find! This was the first time I have ever made brisket. I have been looking for good crock pot recipes and hadn't found anything really outstanding until now. I would give this a 10 if I could. Can't wait to make this again. I had a 4 pound brisket and had plenty of rub and sauce. Served with buttery potatoe rounds and steamed vegetables YUM!!

Mom's Baked Macaroni and Cheese

Good mac and cheese. Here are the changes I make - 2 cans of soup, 2 cups milk and a little less than 16 oz of macaroni. Mix in about 1/2 of the cheese, and sprinkle the other half on top. I really like the flavor of the colby cheese in this.

Creamy Rice Pudding

Soooo good! Made a double batch and I am glad I did it's just about gone. Great comfort food on a snowy day. I used long grain rice and 1% milk since that is what I had on hand.

Apple-Berry Pie

Love this recipe. I chop the apple slices into thirds so the apple kind of gets lost in with the blackberries. Nice not to have as many seeds as traditional blackberry pie. I use 1/2 white sugar and 1/2 brown sugar just personal preference. I have been asked for the recipe by several friends so I'd say it's a hit!

My Best Clam Chowder

Delicious! I like it with 1 more cup of potatoe added, however my son thinks it is perfect as written. Had to thin a little with some milk (I only like thick chowder but mine turned out just a little too thick). A hit with the whole family my sister even asked for the recipe. Similar to the chowder I get at my favorite Oregon coast restaurant.

Southwestern Egg Rolls

Great recipe I also used cilantro instead of parsely. Had the oil too hot for the first one so I had to remove it from the oil quickly, I finished it off in the microwave for 1 minute and it turned out fine. Adjusted the oil temperature and they came out picture perfect. I am going to try changing the recipe a bit and make chimmichangas and beef and cheese burritos. Nice to have fresh homemade items on hand in the freezer!

Chocolate Eclair

My whole family enjoyed this! Really does taste just like biting into a chocolate eclair. I think next time I will only use two layers of graham crackers so the pudding layer is thicker(just my preference). I used milk chocolate pourable frosting and it worked great. *Tip* - I would recommend making in a glass dish, I never put pudding type desserts in metal pans. Quick and inexpensive to make, plus it is enough for quite a few people. This will now be a regular in our dessert rotation.

Chocolate Cobbler

Good! Easy too. My six year old daughter helped make it, I was a little worried that the instructions did not say to mix it all together after pouring the boiling water on top, so I didn't and it turned out great. Served warm with vanilla ice cream YUM!

Mom's Ginger Snaps

I'm not usually a fan of ginger snaps but I love these! Hubby is even getting hooked. Softer than the store bought ones I have had. I baked these for 8 minutes on parchment paper and they were perfect. When I baked them for 10 min I thought the bottom tasted almost burnt.(I think my oven runs a little hot)

Super-Easy Rocky Road Fudge

Excellent! The whole family approved. Quick and easy, I used 1/2 milk chocolate and 1/2 semi-sweet. I did let it cool slightly before adding the marshmallows. Will make again!

Garlic Butter

This is sooooo good! Made turkey melts with cheddar cheese and fresh salsa on them using buttered toasted french bread, sounds wierd but that is what the kids requested, and it tasted pretty good. Also used on a leftover bbq steak excellent! New staple in my fridge. Didn't use garlic salt, used a pinch of Kosher salt instead since I prefer the flavor of Kosher salt.

Sue's Hot Fudge Sauce

This Hot fudge sauce is sooooo good! I had no problems, perfectly smooth and thick. I boiled it for 10 minutes and blended for 4. If you are a real chocolate lover you could add a little more cocoa, but it fine for me just as is.
