Low Carb Zucchini Pancakes
I really liked these pancakes. They held together well in the pan and flipped with no problems. I didn't have any basil, so I added some Italian seasoning. My husband and daughter loved them. I wonder if anyone has made these with egg whites instead of whole eggs. Just thinking of a way to lower the cholesterol. I will make these for breakfast with eggs and morning star sausages. Yummm

Bob's Pineapple Pie
I had a craving for pineapple pie and this one was excellent! I cut back on the sugar to 1 cup, and I added a splash I rum and vanilla to the pineapple mixture. It was so good. I did add the pineapple with tje juice and all and I increased the cornstarch by a couple of tablespoons. The pie cuts beautifully, and really holds it's shape. This one is a keeper!

Sally's Spinach Mashed Potatoes
We loved this recipe. I used 2 bags of fresh baby spinach and cooked it with dehydrated onions. I also boiled the potatoes with 6 cloves of fresh garlic pressed into the salted boiling water. I used reduced fat sour cream and smart balance instead of butter. I also added a little milk for better consistency. It was great! Will make again for sure.
