Chocolate Eclair Cake

This is a GREAT dessert! I made it when we had friends over and everyone loved it. I used sugar free vanilla pudding and fat free cool whip to keep things "lighter", and it was still delicious.

Vegetarian Chickpea Sandwich Filling

This is yummy, with a very different flavor. Followed the recipe exactly, but I would REALLY recommend a food processor, because doing it with a fork, the texture was a bit off. I also served mine warm, on a whole grain bagel. Yum!

Quick and Easy Vegetable Soup

This is a great base. But I added a lot more vegetables! 2 potatoes, 3 large carrots, a medium sized onion, and 2 14 oz cans of whole kernel corn. I also used Vegetable Broth rather than chicken. But the Spicy v8 really makes an awesome base. I needed a little more tomato juice due to my increase in veggies, and to make it a bit more creamy I added approx. 1/4 cup whipping cream. It turned out AWESOME, and we've made this recipe a few times. This is our favorite version!

Mile-High Peanut Butter-Brownie Pie

Great! Made it for Thanksgiving dinner, and the layer of brownie added a lot. Skipped the shavings of chocolate on top and just sprinkled with chocolate and peanut butter chips, it looked AND tasted great.

Cowboy Cookie Mix in a Jar

SO great. I teach, and this was a simple gift for the teachers on my team as well as friends I don't usually buy for. I bought a dozen mason jars and just kept making them. Changed the name to "Winter Wafers" to sound Christmas-y. I also added fewer nuts. Tested them out, they're AWESOME. Already had requests for the full recipe :)

Homemade Tomato Basil Pasta Sauce

this was so great. my husband loved it, and he is typically all about pasta sauce with 1 lb of ground beef. but this flavor made it wonderful and so awesome for a meal on a fall night. we will make this again and again im sure.

Light and Fluffy Spinach Quiche

This was great. I made one w turkey sausage (as is the life of a vegetarian w a meat eating family) and one without. I'd DEFINITELY encourage you to lessen the mayo (I barely used any) and compensated and bit with milk. I added an extra egg and made 2 quiches. I also decided to make it more filling with shredded potatoes (hashbrowns) in there. It was a success!

Black Bean Spinach Pizza

I really did not enjoy this as much as I had hoped, especially based on other reviews. Be careful with the cilantro, in an otherwise bland dish, it seemed over powering at times. I LOVE mexican dishes, and this sounded like a filling vegetarian alternative, which I'm always on the lookout for, but it just didn't hit the spot. I even used a homemade pizza crust. In my opinion this was just not worth making for dinner.

Chunky Potato Soup

Used "not chicken" broth, being a vegetarian, and it was AWESOME! Doubled and saved, perfect fall meal. You can skimp on the butter for sure, but everything else was perfect. Had green onions, shredded cheese, and oyster crackers to go with it, and we were all thrilled. Left out celery and carrot for my picky husband, who added bacon and loved it!

Simple Spinach Lasagna

Although I don't know I'd use the world simple, it was AWESOME. It's so hard to find dishes without meat that my husband wont try to add meat to, and he loved this! We ate leftovers for days, and I didn't change anything. Added a little onion and garlic, just because we love it, but it was great as is! I'll make again!

Although we will definitely have this again (a non meat dish my husband likes is a keeper!) there were a few issues. One, as most people have pointed out, there is too much salt! I would leave the salt out of the sauce and add it to taste if necessary later. I used fresh garlic rather than garlic salt, and used a bit more parsley. Two, the sauce needs time to thicken, and I still added spinach because it was very thin. Three, this is NOT 8 servings. There was just enough left over after two of us ate for my husband to take some in his lunch! But overall, really really good!

Mexican Layered Dip

REALLY GOOD!! I would suggest warming it a bit before serving, just to melt the cheese and warm the beans a bit. An awesome vegetarian appetizer, and no one even missed the meat!

Frozen OREO® Pizza

This was awesome. I made it when my husband's whole family came over. They're endlessly critical, but there's nothing negative they could say. I used more whipped cream mixed in with the pudding, since it was a little thick. I also skipped the butter, and the crust was fine without it.
