Chef John's Pumpkin Pancakes

Sorry Chef John, love your other recipes but really dissappointed in this one. Was really looking forward to making this as I love pumpkin and pie spice. However, they were too spicy and overwhelmed the flavor of the pumpkin. I am sure I could make another iteration of this recipe reducing the spice amounts but don't want to waste the ingredients experimenting. The only reason I gave it as many stars as I did was I am sure the basic pancake recipe is good.

Chicken Cordon Bleu II

Absolutely fabulous!!!! It is so easy, a beginner cook could razzle dazzle her new in-laws or boyfriend with this recipe. :) I took Harriet Green's advice and used Gruyere and proscuitto. Also, I prefer "Better than Bouillon" chicken base to the granules -flavor is richer. I made it for just my daughter and me so I halved the meat. The result was I had extra sauce to put on the mashed potatoes- yum. As a result when I make the full recipe, I will double the sauce.

Pasta Carbonara

Made as written, I was dissappointed that this was not carbonara sauce that I have been searching for. :( I gave it 3 stars because the basic sauce was rich and creamy and has potential, but the bacon flavor was overpowering and was not in character with the "restaurant quality" carbonara sauces I love. So, I will still search.

Buttercream Frosting

Recipe perfect as is. Great taste and perfect texture for cake decorating. Yes, you need the full 8 cups of sugar, especially if you are going to use the frosting to decorate. Also, without the sugar, the flavor is too buttery.

Best Tuna Melt (New Jersey Diner Style)

As a tuna melt lover, had been looking for a good recipe - and this is it!! After tasting original recipe, I felt the mixture was a little dry so increased mayo to 3/8 cup. Also, the flavor "needed a little something" so added 1/4 t Old Bay seasoning. With these 2 tweaks, the sandwich was diner "blue plate" quality.

Made this last night and was really dissapointed because it looked and sounded good. Rated only 1 star because it was way too lemony. Also, recipe required so many adjustments to make it flavorful.

Beer-Baked Irish Beef

Wonderful, rich stew. I believe the allspice enhanced the flavor. Proud to be Irish with this one!!! :) Served with Champ and Penguin Lady's Irish Soda Bread on this website. Alterations to recipe: Used only 2 pounds of meat and made with 2 cups whole baby carrots. I also altered cooking method. Sauteed the onion and garlic with meat in dutch oven. Added remaining ingredients and simmered for 2 hours, stirring occasionally. Beef was melt-in-your mouth tender!! Recommend adding bacon "to taste" because the gravy was already rich and flavorful enough. I will also try adding potatoes to stew instead of the serving champ on the side just to "change up".

Irish Soda Bread

This was GREAT and added it to my fav recipes. Being of Irish decent, I have been searching for a great Irish Soda Bread recipe only to find, until now, dense and dry breads. The only change to the recipe that I made was that I used 1/2 golden and 1/2 black raisins because I like the mixture.

Sauteed Garlic Asparagus

Famous Pork Chops

Great recipe - turned out yummy. Simple comfort food. Read reviews and did the following alterations: Crumb Ritz crackers coarsely for more texture. used all the butter and 1 t. of garlic salt. Baked for 20 mins, turned over, sprinkled with remaining crumbs. Baked for another 20 min and removed cover and bumped up temp to 400 degrees to bake for the final 15 mins. Got the crust I wanted for texture but without soggy.

Chicken Scallopini

Made this last night - this is a keeper. Did not make any changes to recipe. Recipe was so simple, but elegant enough for guests or a romantic dinner. I served it with rice pilaf and broiled asparagus drizzled with olive oil, S&P, and roasted minced garlic. Found the demi-glace at Williams Sonoma. pinot grigio wine was great with it.

Mint Chocolate Chip Cookies

Tried these because I was looking for a holiday cookie that was simple but tasty to all - job done!! They have just a hint of mint and they made great last minute gifts served on little holiday cookie plates. Would probably also make on St Patty's Day, if I could find the creme de menthe chips.
