Chef John's Pumpkin Pancakes
Sorry Chef John, love your other recipes but really dissappointed in this one. Was really looking forward to making this as I love pumpkin and pie spice. However, they were too spicy and overwhelmed the flavor of the pumpkin. I am sure I could make another iteration of this recipe reducing the spice amounts but don't want to waste the ingredients experimenting. The only reason I gave it as many stars as I did was I am sure the basic pancake recipe is good.

Chicken Cordon Bleu II
Absolutely fabulous!!!! It is so easy, a beginner cook could razzle dazzle her new in-laws or boyfriend with this recipe. :) I took Harriet Green's advice and used Gruyere and proscuitto. Also, I prefer "Better than Bouillon" chicken base to the granules -flavor is richer. I made it for just my daughter and me so I halved the meat. The result was I had extra sauce to put on the mashed potatoes- yum. As a result when I make the full recipe, I will double the sauce.

Best Tuna Melt (New Jersey Diner Style)
As a tuna melt lover, had been looking for a good recipe - and this is it!! After tasting original recipe, I felt the mixture was a little dry so increased mayo to 3/8 cup. Also, the flavor "needed a little something" so added 1/4 t Old Bay seasoning. With these 2 tweaks, the sandwich was diner "blue plate" quality.
