Blueberry Lemon Bread

Perfect! The combination of lemon and fresh picked blueberries made this bread a favorite go-to recipe. Only needed 60 minutes in my oven. My husband couldn't wait for it to cool before taking a slice; will make again.

Zucchini and Carrot Coleslaw

I made this slaw this morning, at first taste was bland. VERY important to let the flavors blend for at least an hour. I substituted stevia and left out the sugar. Lightly salt the shredded zucchini and squeeze the liquid out after the 30 minutes. I used a Miracle Whip(not light) type dressing, also added 1/4 tsp. celery seed, some minced onion and about a tsp. of white vinegar. Wow, this is good!

Peanut Blossoms II

This is the PERFECT peanut butter kiss recipe. I made to the exact recipe as far as ingredients, only needed to bake 9 minutes, though. I had less than enough kisses for the whole batch, so I used the dough and made teaspoon sized balls and pressed lightly with a fork to make regular peanut butter cookies. Those only needed 7 -8 minutes at 375. I'll be using this one again!

Cream Cheese Cookies III

Great tasting bar cookie. I used homemade butter and cream cheese. (Have our own cow!) Oops, I was multitasking at the time, baking other cookies , and forgot to bake the crust first. I had already spread the cream cheese mixture on, so I increased the bake time ten minutes .... worked fine.

Buttermilk Wheat Bread

This recipe works really well for me. I use my Kitchenaid mixer to make the dough, using slightly less flour than called for and adding until I have the correct mixture. I also use the buttermilk from our cow, so it is not sour yet. I add a splash of vinegar to the liquid. Use it regularly and substitute different flours in addition to the whole wheat( buckwheat, sunflower seeds, semolina....whatever is handy)

Poppy Seed Chicken Casserole

Very good casserole! I don't use canned soups, made my own with the broth from the chicken I made in the crockpot yesterday. Also used light sour cream and cut down just a bit on the butter. I love the crushed cracker /poppyseed topping. Will definitely make this again.

Sky High Yorkshire Pudding

Made this to serve with sirloin steak. I fried a few slices of bacon in my cast iron skillet so that I could use the drippings instead of the oil. Made a half recipe ....worked beautifully! My husband's new favorite!

Chewy Red Raspberry Squares

This recipe is excellent. I made a few minor changes after reading the comments about being too sweet. Instead of jam, I used fresh raspberries, about a quart, mixed with only 1/2 cup of sugar(jam would have at least 4 times as much), and a tablespoon of clear jel. This made more of the raspberry layer, which was so very yummy. I should mention that I doubled the recipe for the crust and crumble part and used a 9 x 13 pan with the quart of raspberries. Baking time was good at 40 minutes.

Irish Soda Bread II

This was very good. I planned to serve with a main dish of mussels, so I omitted the raisins and caraway. Was only in the oven for 50 minutes and was done...maybe the size of my pan cut down the bake time. Bread was great for dipping in the broth, and toasted well the next morning for breakfast. Will make again!

Romanian Apple Cake

This is, by far, the BEST apple cake recip I have tried. It's simplicity is an added bonus. I will be using it when my granddaughter visitis, as I think she will be able to easily follow the directions. I added a light drizzle of glaze last time I made it, this time I threw in a handful of dried cranberries. Love it!

Oatmeal Pancakes II

This is quite good. I substituted oat flour for the oatmeal, so I did not need to use the food processor......just whisked the dry ingredients in the bowl before adding wet ingredients. I made my own elderberry syrup this year, so that topped our pancakes this morning.

Zucchini Tomato Pie

Very good! I sometimes use pepperoni bits or sausage that I have sauteed in this pie. ALWAYS saute your zucchini first to take some of the liquid out of it. Mozzerella is a nice addition, too.

Chicken Milano

Great recipe. I cut out some fat by using canned milk instead of cream....still VERY tasty. Instead of fettuccini, I used homemade noodles. I freeze dehydrated halved grape tomatoes from our garden every year, they are perfect instead of buying the expensive sun dried tomatoes.

Pumpkin Pie III

Very good. I used baked and pureed butternut squash.....no one ever knows that it is not pumpkin. I actually like the flavor of swuash better than pumpkin. I like the flavor of the molasses, but cut the amount in half, as some reviewers suggested.

Oil Pie Crust

I like the taste of a butter crust better, but this is good for no cholesterol diets. I used skim milk in mine, and also pastry flour. Using the exact recipe amounts, my crust was tricky to roll, but not tough. I will use again.

Sauerkraut for Canning

So easy, so yummy! I use my food processor to do my shredding, and used a plastic container from my wine making kit(about a six gallon volume) to do the packing. A large plate was a perfect weight, topped off with a large plastic bag filled with salt water. This bag spreads out and seals the edges over the plate on the cabbage. I had absolutely no scum formation. I did use the lid that came with the plastic container, also.
