Italian Rice Balls
This is a very traditional croquette recipe from southern Italy. My mother use to make them just like this (minus the black pepper). You need to chill them for several hours before you are able to properly form them into croquette or ball shapes or they will fall apart. Once they are in the oil don't disturb them until they are golden on one side and then gently roll them over to avoid them falling apart. I have also sprayed them with olive oil and baked them in the oven to make a large batch of them without using so much oil and taking so much time.

Baked Ziti I
Not a very traditional version. I would replace the sour cream with ricotta if you like, or just leave it out. Also, mix some sauce and parmesan cheese right into the ziti before you begin to layer. Our family traditional recipe also calls for sauce, shredded mozzarella and mini meat balls in the mid-layer. But just using a meat sauce is a quick and easy alternative.

Fluffy Pancakes
Best Pancakes I have ever had! My family just loved these pancakes! My husband who usually likes his pancakes more like crepes said they were the best he has ever had. My kids loved them and wanted more. Usually they only eat one! Don't be fooled by the vinegar in the ingredients, you don't taste it. I did add 3 tbs of sugar because my kids like them sweeter. I also let the batter sit in the fridge for about 30 minutes and it actually turned out better than using it right away. You need to try these pancakes, they will become your family favourite!
