This recipe turned out amazing!! It was my first time making rice pudding, I've made it a couple times since. It is great as long as you follow the recipe and use short or medium grain rice, as Erica states. I substituted coconut milk for regular milk and it turned out really well. If you like coconut you will like this. Also for anyone having trouble with the egg. You have to add egg to rice pudding to thicken it. If you don't want your egg to cook into chunks break the egg into the cup of left over milk. Mix the egg and the milk mixture until the egg is essentially dissolved into the milk and the mixture is an off yellow colour. If you warm the mixture up for 30 seconds - 1 min in the microwave and then stir the mixture one more time before slowly adding it you are guaranteed to have no egg chunks and amazing rice pudding.
