Best Burger Ever

Reviewed: May 7, 2001
I made this last night with ground turkey and it turned out so well! My toddler's a very picky eater and this the first time her hamburger was gone in a flash! Like the first poster, I agree, it's even better the next day!

Chicken Enchiladas I

Reviewed: May 11, 2001
This was a surprise hit in my family. Between a picky toddler and a husband who hates onions and peppers, people were fighting for the leftovers! Like I've seen people post, I used a less tomato sauce in the mix and put enchlada sauce on top. A definate keeper cause everybody wants it again soon.

Coffee Roast

Reviewed: May 18, 2001
This made for a very tender roast, though like some posters, I have to agree, it took a bit to make the gravy.

Haddock Bubbly Bake

Reviewed: May 23, 2001
This was incredably flavourful! With the exception of my toddler, who was sick, everybody loved it!

Porcupines

Reviewed: Jun. 5, 2001
I added about half a packet of onion soup mix to the meat mixture and then added some leftover "Devine Spagetti Sauce" I had on hand and it turned out WONDERFULLY! I don't know if I made them too big, but the meatball rolling was a lil messy and and made up for a little more time devoted to prep and clean up, but was well worth it because it was loved by all.

Candied Chicken Breasts

Reviewed: Jun. 5, 2001
It was a good thing I packed up some of this for my husband's lunch before serving dinner because what was left was gone in a flash! I cubed the chicken and cooked it with peppers and pineapple and my only complaint would be the sauce was thinner than I was expecting. I made it Monday night and it's already being requested for dinner again.

Divine Spaghetti Sauce

Reviewed: Jun. 5, 2001
This recipie was initially doubled and my god, did it make a lot of sauce!! It was a little too chunky for everybody's tastes here, so I pulsed it in the blender. This is a great make ahead and freeze sauce!

Twice Baked Potatoes

Reviewed: Jun. 22, 2001
I mixed the cheese in with the potato mix and used both fat free cheese and sour cream. Paprika sprinkled on top was both flavourful and festive! My finicky toddler actually asked for more!

Cheeseburger Noodle Casserole

Reviewed: Jun. 22, 2001
This definately needs a more substantial pasta than just spagetti - I used bowties and was quite happy with it. A touch of hot pepper and worstershire sauce added zip, but was still kid friendly

Barbequed Marinated Flank Steak

Reviewed: Jun. 22, 2001
I had high hopes for this recipie, and I will admit, it was a nice marinade. It truely made for the most flavourful shoe leather I've ever had! Prehaps it was the meat, but thank goodness I didn't follow the cooking time.

Buttery Cooked Carrots

Reviewed: Mar. 21, 2002
The whole family loved this - even me and I HATE cooked carrots. I added a bit of cinnamon and nutmeg along with a squeese of lemon.

Beefy Spanish Rice

Reviewed: Mar. 21, 2002
I helped make this at a friend's house the other night and what impressed me is how easy it was to stretch it for more guests. I would season as you go, rather than wait to end so the flavours can meld. Less ketchup was also used

Orzo with Parmesan and Basil

Reviewed: Apr. 24, 2002
I tried this with ABC-shaped pasta cause I didn't have orzo and it still turned out well, very easy and tasty!

Barbecue Beef Cups

Reviewed: Apr. 24, 2002
My picky daughter thought this was cute AND ate it, so I'm happy. But what I really like about this recipie is how versitile it can be - just look at all the members who've been inspired! I personally might try my mom's spinach pie filling with it.

Caramel Apple Pork Chops

Reviewed: Jun. 10, 2004
This turned out very nicely - the seasoned apples went really well with the pork. I didn't have any pecans, but will probably try that next time. This is a very nice alternative to the usual shnitzel I've been doing with pork cutlets.

Todd's Famous Blueberry Pancakes

Reviewed: Jul. 27, 2004
I'll admit, I never follow recipes exactly and to this one I used about 2 tbs of powdered sugar and a tbs of honey. I also added about a cup a blueberries. This was a great hit with my family!

Tangy Pear and Blue Cheese Salad

Reviewed: Jul. 27, 2004
I also halved the amount of dressing I made and was very happy with the results. Personally, I would take care to make just enough as this salad does not make for good leftovers.

Mini Cheesecakes

Reviewed: Jul. 27, 2004
These are just like the mini cheesecakes my mom's been making for years. Rather than crumble the vanilla wafers, I plunk a whole wafer down each paper muffin cup.

Chocolate Chip Pancakes

Reviewed: Nov. 26, 2006
I just wanted to add that my own change to the recipe was to add a ton of vanilla to the wet ingredients. These pancakes turned out amazingly well! They were light and fluffy and incredably easy and quick to mix up. I'm never going with a boxed mix again! I didn't make the syrup, but then we've never had any with chocolate chip pancakes.

I seasoned the actual salmon with salt and pepper before giving it a dip in the yummy dijon sauce - this went down really well with my entire family
