About this Cook
Our family was completed on August 18, 2010 with the birth of our second son, Hunter. I spend my days at home with Hunter and his big brother Kristopher. We enjoy listening to music and playing outside when Oregon weather permits!
My favorite things to cook
For the longest time until we had Hunter I would just cook the same things over and over, it was always spaghetti monday, and taco tuesday..and so on. Once I had Hunter we decided it was time for me to really become 'mom' and start cooking a variety of things. I am on this site every day getting new ideas for what to make for dinner.
My favorite family cooking traditions
'Grammys Cheesy Potatoes' Sadly she is no longer around to cook them, so my dad makes them now. I am sure I could also, and I should try since my hubby loves them so much!
My cooking triumphs
I recently tried the 'My Best Clam Chowder' recipe. It turned out EXCELLENT! It was to date, the most complex thing I have done. I only have one day a week where I am able to take the time to do something that takes so much work. I look forward to taking the time to make other more complex things as well.
My cooking tragedies
I have given up on the basic chicken and rice dinners where you just cook it all together. My rice NEVER cooks properly! Half of it will be all done, and the rest is still hard. I don't know why this happens, but I have chosen to use instant rice or just stay away from this dinner in general from now on!

Flourless Peanut Butter Cookies
I changed this just a little bit. I used 3/4 cup packed brown sugar and 1/4 cup white sugar. We loved that they didn't get hard or crumble! They were great!

Momma's Sloppy Joes
I tweaked the recipe just a little bit to add some veggies and make it a little bit more rounded. I finely chopped a green pepper and 3 fresh banana peppers to add in. They were a hit with the hubby and the mother and step father in law, not to mention our picky 19 month old!

My Best Clam Chowder
My hubby and I LOVED this! And having a brand new baby it was great because we were able to have it the day I made it, plus I was able to freeze enough for 2 more meals!
