Sam's Famous Carrot Cake

This recipe is much more than the standard spiced carrot cake because it has everything; nuts, raisins, coconut, and pineapple. I made the recipe as written, but would reduce the baking time to 40 minutes as an hour is much too long. I checked the cake after 50 minutes and the top was already too dark and it stuck to the glass Pyrex pan sprayed with Bakers Joy. If you don't like the texture of coconut in a cake, try pulsing it in a food processor to make smaller pieces and bring out the coconut flavor. I used one teas cinnamon rather than two, 1/2 teas nutmeg, and 1/4 teas cloves to balance the spice. I topped this with a very spreadable cream cheese frosting from Cooks Country: 8 oz cream cheese, 6 Tbsp butter, 1 1/2 cups confectioners sugar, and 1 teas vanilla. Thank you Brian for sharing your grandfather Sam's wonderful cake recipe. A keeper.

Banana Oatmeal Cookies III

This is an awesome cookie. Don't swap butter for the Crisco; it's much heavier and will change the taste and texture, competing with the banana flavor. When baked on parchment at 400, the bottoms were brown after 8-9 minutes. These cookies are cake-like and do not spread much, so you can add that extra row on the cookie sheet without overlap. I added 1/2 cup golden raisins. Next time I'll increase the nutmeg to 1/2 teas and the cinnamon to 1 full teaspoon. I brought them to work and everyone raved.

Pineapple Sour Cream Pie

This pie was outrageous. The sour cream pineapple combo is to die for. I swapped coconut extract for the vanilla in the meringue (which flopped.) Next time I'd try five egg whites, and practice a bit more on my technique. Despite my err on the meringue, our friends all raved about it. This pie is a great choice for using up cans of pineapple in the pantry, and an even better reason to buy it!

Fruit Balls

Great gluten free recipe with good variety of ingredients. I substituted dried cranberries for the golden raisins, and mixed nuts for the pecans, bc it was on hand. I also added 2 Tbsp flax seeds. I used less honey and added 2 Tbsp coconut oil. These are not sweet, but will provide a good energy boost before workouts. Thanks for sharing this, Sal.
