Finnish Nissua

Reviewed: Nov. 3, 2010
I used to eat a lot of nisu in the UP of Michigan. I brushed my loaves with egg wash and sprinkled them with sugar. Delicious. Thanks for the recipe! P.S. This bread makes GREAT French toast.

Cornmeal Molasses Bread

Reviewed: Dec. 30, 2010
Great bread. My family ate the whole thing in one sitting. I don't have a bread machine, so here's how I made it with my stand mixer. Add the cornmeal, 1 cup of flour, salt, and a packet of yeast to the mixer bowl and mix. Heat up the water, molasses, and vegetable oil to 130 F (hot, but you can still put your finger in it without burning yourself). Then add the liquid mixture to the mixing bowl and mix. Gradually add the rest of the flour (you may not need all of it) until the dough balls up on the hook and is slightly sticky. Then knead by hand for 5 minutes on a floured surface and leave to rise for an hour or so in a covered bowl. After, knead the dough, shape into a loaf (or put it in a greased loaf pan) and leave to rise another 30 minutes. Preheat oven to 375 F. Bake for about 40 minutes or until the internal temp of the loaf is 200 F. Enjoy!

Chewy Peanut Butter Crisps

Reviewed: Jul. 10, 2012
These were winners with my family. I followed the recipe exactly, but added the extra step of putting the dough in the refrigerator while the oven was heating up. These are thin cookies, it's better if the cookies are on the small side so you don't get a giant, thin cookie.

Peach Muffins

Reviewed: Jun. 17, 2013
I baked these at 375 for 15 minutes in mini muffin tins. Bakes 48 muffins. Turned out great, the kids loved them :) I didn't need to add any milk or anything, I used the ingredients as written.

Sweet Dinner Rolls

Reviewed: Sep. 16, 2010
Love these rolls. I skipped the 1/4 cup of butter at the end. I made them into 18 rolls and baked them in two 9x9 glass pans at 375 F for 17 minutes (internal temp of 200 F) Light and fluffy and delicious.

Watermelon Slush

Reviewed: Sep. 13, 2010
Great recipe and simple! I made some for a picnic and it was a definite crowd pleaser. I used fruit juice instead of lemon-lime soda (for the kids), and added a touch of alcohol for us adults :D

Skillet Herb Roasted Chicken

Reviewed: Dec. 8, 2010
It's fast and easy. Not ground-breakingly delicious, but definitely good and a go-to meal if you need something in a hurry. Plus, my kid will eat it, and that's always a plus in my book.

Jumbo Shrimp and Asparagus

Reviewed: Feb. 10, 2012
Great easy dinner. I added 2 cloves of minced garlic. I also dissolved 1 Tbs of corn starch in the 2 Tbs of reserved asparagus water so the sauce would be thicker (kind of like what you would get in a Chinese restaurant). I usually serve it with soba noodles (Japanese buckwheat noodles) or brown or white rice. The sauce works for almost any stir-fry veggie/meat combination.

Parchment Salmon Packages with Asparagus

Reviewed: Oct. 10, 2010
Pretty great. Easy to make and fast. It's even faster if you cook it in the microwave for about 4 minutes (my microwave is 1100 watts. If your microwave is less powerful, you'll have to cook it for longer. Greater than 1100 watts = less time).

Chocolate Swirl and Chip Cookies

Reviewed: Jul. 12, 2011
Definitely a tasty cookie. It's a chocolate chip/oatmeal crossover. It didn't swirl though. I folded the dough enough so I could see swirls in the unbaked dough, but after baking the swirl was nonexistent. If you're looking for a swirl cookie, you might want to look for a different recipe.

It's easy to make but not so tasty for me. I probably won't make it again.
