Vegetable Meatball Stew

Reviewed: Mar. 21, 2012
My mom used to make a very similar version of this stew, but hers was less watery. I think next time I will reduce the water to only 2 cups. Also, I didn't add the green peppers, didn't really think they were needed. The flavors were great and would definitely make this one again.

Zucchini Cobbler

Reviewed: Mar. 20, 2012
I had a bunch of zucchini (the pale green variety) I needed to cook up and found this creative twist on a cobbler. I was sure to peel them completely, to avoid any bitter taste, and cubed them small. I also used the following as my crumble: 1/2 cup butter (softened), 1/2 cup flour, 1/2 cup brown sugar, 1/2 cup old-fashioned oats, 1/2 cup crushed walnuts, and 1/2 teaspoon cinnamon (mix together with fingers to chunky crumbs). My biggest critics (my 4 kids) loved it and I didn't reveal the "secret ingredient" until it was completely gobbled up! Using apples definitely tastes better, but this is a fun and different option to use up those extra zucchinis.

Greek Veggie Salad

Reviewed: Feb. 19, 2012
Full of flavor! I added more Feta and only used 1/2 the dressing. Kids and Hubby loved it so you know it's gonna be a repeat recipe!

Spicy Eggplant

Reviewed: Jan. 11, 2011
I loved this recipe!! I actually didn't have sesame oil but I could see how it would just add more to the flavors. I also substituted Worcestershire sauce for the oyster sauce. The flavors were just right with the chili sauce, not too spicy, just the right kick. Thanks for sharing this recipe I will definitely be making this one again.

Rolled Buttercream Fondant

Reviewed: Dec. 22, 2010
This was my first time using any type of fondant and it was exhilarating! I had so much fun with this recipe. I used it for a two-layered 9 x 13 cake so I doubled the recipe. Since there were so many greesy reviews I halfed the shortening which is the only reason why I gave it 4 instead of 5 stars. Also took care in how much confectioners' sugar I added to avoid the cracking. As soon as the fondant felt a bit plado'ish I let it be (probably had about 2 cups left of sugar). I added the food gel to make the color I needed and kneeded it by hand. When I eventually rolled it out I used corn starch to smooth out the fondant over the cake. It looked great and tasted great... everyone thought I bought it!! Thanks so much for the recipe!

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Dec. 22, 2010
Really easy and amazing frosting... definitely make with butter!! As other reviewers said it is a very sweet recipe but the cocoa really balances it out. I doubled the cocoa and it was perfect.

Tuna Noodle Casserole from Scratch

Reviewed: Jan. 18, 2010
Great Recipe... I've made it several times already. I don't use as much butter as suggested though and it still comes out delicious. I skipped the mushrooms (my son's not a fan) and used corn flake crumbs in place of bread crumbs, not buttered, just straight sprinkled it on top of the casserole. Easy way to sneak in extra veggies too... the kids love it!!

Easy Garlic Broiled Chicken

Reviewed: Dec. 15, 2009
I made this with fresh parsley and used olive oil instead of butter... this was fantastic, even my daughter licked her fingers!! I broiled it for about 15 minutes then let it cook a bit longer at 350 for another 20 minutes (since I used chicken on the bone). A keeper... thanks for sharing!!

Mulligatawny Soup I

Reviewed: Oct. 6, 2009
I was really looking for something different and good and this is it! I doubled the curry (pretty spicy, but that works for our fam) and doubled the apples. I used no-chicken chicken broth and didn't add the cream at the end. It came out GREAT!! Even my 8-year old, picky eater, asked for seconds. Thanks for sharing this recipe!

Chicken Pot Pie IX

Reviewed: Aug. 11, 2009
This was a super easy, super delicious and healthy recipe, definitely a keeper. I didn't use the butter, instead just a generous splash of evoo, also didn't have celery seeds so used celery salt (no extra salt added) and fennel seeds, also I used a milk substitute and it came out perfectly creamy. A filling and satisfying dinner for the whole fam!

Marrakesh Vegetable Curry

Reviewed: Jun. 1, 2009
GREAT!!! I made this for myself and my Moroccan in-laws and it was absolutely true to the original. I didn't have carrots or orange juice. But I substituted the OJ for a few generous splashes of lemon juice. I served over couscous. This is going to be a definite repeat.

Chicken Diane Style

Reviewed: Feb. 21, 2008
This is defenitely one I'll make again. I didn't add the parsley or the chives (I just didn't have any), but I think next time I will - it seemed to be missing something. Otherwise really juicy and tasty.... and even more it was easy to prepare.

Broccoli with Garlic Butter and Cashews

Reviewed: Oct. 16, 2007
Just made this for the first time and I will absolutely make it again! I only used about 3 tablespoons of butter insead of the full 5 and didn't seem to miss anything. This was so tasty and goes great with a light fish. I made the sauce and tossed the broccoli in it before serving instead of just pouring it over. We loved it to the last little floret!

Taste was great - but unfortunately I read the reviews after I had already made it and it did come out way too flat. Next time I will double it.

Golden Sweet Cornbread

The cornbread tasted great... but it completely fell apart so I wasn't able to serve it at all. Instead I used it as part of my turkey stuffing.

This came out really well! My guests loved it more than the bakery bought dessert for the same event. I used frozen strawberries and blueberries instead of the raspberries and it was delicious... I'll definitely make this one again!
