Hershey's ® 'Perfectly Chocolate' Chocolate Cake

I made the following changes: substituted coconut oil for the vegetable oil; substituted espresso for the water; substituted Special Dark cocoa for the regular (Dutch process cocoa). The icing for this is really great. Husband totally digs this cake.

Quick Pumpkin Pudding

I wasn't too impressed. It WAS quick and simple, but seemed bland to me. I did use sugar free pudding. I also added pumpkin pie spice slowly since others said the spices were hard to get right. I felt like I either had to have it too bland or too spicy. I added a cup of cool whip at the end to try to sweeten this up. I'm probably not making this again...too bad, it seems like it has possibilities but I can't figure out how to fix it. Maybe another kind of pudding, like white chocolate?

Super Delicate Chocolate Buttercream

One word: Greasy. I was disappointed with this recipe. I liked that it didn't use a lot of sugar, but it did seem like a lot of butter and shortening. The frosting seemed soupy when it was done. I put it in the freezer, thinking the heat of the warm syrup had perhaps melted the shortening, and the texture did improve as it chilled. However, it was just too greasy tasting. I ended up adding in two cups of confectioner's sugar to try to balance out the greasiness. It still was just too greasy for me.

Cold Szechuan Noodles and Shredded Vegetables

This is quickly becoming one of my staple recipes. I can make up a recipe and have it in my fridge for lunches. Really yummy, easy, and different from the same old ho hum.

Spinach Mushroom Quiche

My family loves this recipe. It's versatile. I've made it with different veggies and soup mixes. I use milk instead of cream to lower fat, and low fat cheese. This is very filling.

Homemade Marshmallows II

I hope that the person who posted this recipe will tell me how she whipped the marshmallows. I tried this twice. I used a thermometer to judge the temperature, but when I beat it, it turned to dust. I am desperate to find a vegetarian marshmallow recipe. I used a stand mixer. Too much power?

Baked Potato Soup II

This was good but no wonder everyone loves it...nearly a stick of butter and a cup of sour cream! I used half the butter and used my immersion blender to cream one of the potatoes into the white sauce. Also used non-fat sour cream. Add spices after potatoes are added...salt, pepper, white pepper, and a teaspoon of butter extract for flavor. 1/2 cup of wine and onions would be a nice addition.

Cauliflower and White Cheddar Cheese Soup

This was a good recipe but I added a little bit of wine into it to add a bit more oomph. It reheated well, too. My daughter didn't like it, but she is only 4 and doesn't like anything too weird.
