Flatlander Chili

This was my first attempt ever at making Chili and it turned out great! I had tomato paste and diced tomatoes in my pantry so used that instead of tomato juice and tomato sauce.

Black Bean and Artichoke Burritos

First time making a vegetarian burrito and I must say I did not miss the comfort of chicken or beef that usually goes into a burrito when I make one! A light modification, I rinsed the black beans and added a cup of water before boiling the beans on high. I added red bell peppers into the artichoke mix. I grilled the burrito and it was a success! Thank you for the recipe and I will be making this again in the future!

Vegetarian Korma

This was simply delicious (and very easy to make!) and warms me up on a cold winter day. The only thing I did differently was cooked the potatoes a little longer. Next time, I will use coconut milk to taste the difference from heavy cream. I will make this for my husband when he comes home. Thank you for the recipe!

Baked Potato Skins

The recipe turned out great! I used yogurt butter mixed with olive oil and the rest of the ingredients to brush on the potatoes. Also, I used Turkey bacon and it turned out delicious! Thanks for the recipe!

Spaghetti Carbonara II

I have made carbonara before but it turned out really rich and wasn't so good. This recipe was great! I added nutmeg to my dish and used turkey bacon instead of regular bacon. (It's less oily than regular bacon)

Easy Eggplant Parmesan

I made this and it turned out delicious! I look forward to making this for my husband I salted the eggplant for 1/2 hour, make sure the eggplant is thinly sliced so it is easier to cook and cut into.
