Breakfast Pies

I made this tonight for my MOPS group tomorrow morning and I almost thought I was going to have to pick something up from the grocery store! I followed recipe exactly and the muffins spilled over to the bottom of my oven and my whole house filled with smoke! My husband and I split one and I will be taking them tomorrow morning. If I do make these again, I might try using pie crust. It won't puff up as much and spill out all the egg.

Connie's Zucchini "Crab" Cakes

Great recipe! I've made this a few times and found that the small to medium zucchini works best. I drained and squeezed out zucchini, added more Old Bay and froze patties before cooking. Freezing makes them easier to handle and you can cook as many or as little as you want.

Spam Musubi

On our 7th trip to the Hawaiian Islands, we finally tried Spam Musubi! It is "ono"! I have to say I only used this recipe as a guideline. I made a few changes. I marinaded the spam in teriyaki, and cut nori into 1 1/2 inch strips. I also bought a musubi mold, which I got in Maui, but you can buy them online. Dip mold in water before molding each musubi, it will make removal much easier. Also lay a piece of plastic wrap on flat surface, lay nori on top, center mold and fill with rice then spam and then rice again, press. Remove mold, wrap seaweed around rice and wrap in plastic. I gave my sister two musubi's to take home...one for her and for her husband...she ate both! Mahalo!

Awesome Carrot Muffins

My 5 yr old loves these. She had one for breakfast this morning. I used 1/2 cup unsweetened applesauce and 1/2 cup oil and also used 1/2 cup whole wheat flour. I froze half of the batch for later consumption.

Michelle's Peanut Butter Marbled Brownies

These brownies were delicious! I took these to a party and they were gone within two hours. I accidently used one 8 oz. pkg. of cream cheese, so I added a little more peanut butter and sugar and they turned out just fine. I will definitely make again.

Ibby's Pumpkin Mushroom Stuffing

Once a month, we get together with my sister's family and have a cooking night with a theme. This most recent theme was pumpkin. This recipe intrigued me, so I just had to make it. I used Pumpkin Bread IV from this site. I made a few minor changes, all because it was what I had on hand or I couldn't find it in the store. I used white onion instead of red, white mushrooms instead of crimini, and used all dried herbs. I also added more chicken broth since my bread cubes were really hard. The dish was sweet and savory, definitely different, but very good. I would like to make again.

Tuna Salad With Fresh Dill

I used doubled the recipe and used albacore tuna, drained. I will try sour cream next time, I thought the low fat yogurt made it a little runny, but overall it was delicious and I will definitely make again.

Fettuccini al Fungi

This is a great recipe. It does need more seasoning. I added salt, extra pesto and extra cream cheese and only used white and portabello mushrooms. I also added a tablespoon of garlic cream cheese. It's even better reheated the next day--it's creamier.

Butternut Squash Soup

This soup was so yummy! When I had planned to make this for dinner my husband told me that he does not like squash, so I told him he could heat up leftovers from the previous night. He decided that he would eat the soup and he loved it! The cream cheese is the key ingredient. I used reduced fat and only one package...very creamy and thick. I did not have marjoram, so my husband looked up on the internet and found oregano as a substitution. Looking forward to eating for lunch tomorrow!

Apple, Cranberry, and Pear Crisp

Great fall recipe! I doubled the recipe since I have an abundance of apples and pears. The only change I made was to add cinnamon and nutmeg. I'll be making this again!

Slow Cooker Stuffing

Easy Pesto

Great idea to use almonds! I toasted on stovetop, which was quick and easy. Added a couple tablespoons of grated parmesan cheese and salt to taste. Can be prepared in advance.

Oven Roasted Potatoes

I've always had a hard time making cooked, crispy oven roasted potatoes...until now! The key is to cut potatoes in small bite-sized cubes, high heat & consistent turning. Be sure to season well...to the point where you think you over-seasoned. I used lots of salt, pepper, garlic powder and an italian blend seasoning. I put all ingredients in a ziploc bag and shook it up.

Zucchini Alfredo

This was delicious! 3 year old asked for seconds...without the noodles! I had just baked zucchini bread and had leftover shredded zucchini and needed to make dinner, so this recipe was perfect.
