Connie's Zucchini "Crab" Cakes

Great recipe! I've made this a few times and found that the small to medium zucchini works best. I drained and squeezed out zucchini, added more Old Bay and froze patties before cooking. Freezing makes them easier to handle and you can cook as many or as little as you want.

Carrot Cake III

A very moist, not too dense carrot cake! I added more carrots, decreased oil to 1 cup and used a single serve size of Motts Peach Mango Applesauce (it's all I had, I just couldn't use that much oil!) decreased the sugar to 1 3/4 cups and ommitted the nuts. The cream cheese frosting is excellent. I also used less powdered sugar, about 3 1/2 cups. I will be making again!

Best Ever Jalapeno Poppers

These were really good, but they are a lot of work and make a mess! I had a lot of jalapenos from my garden and this was a great way to enjoy them! I will make these again.

Extreme Banana Nut Bread 'EBNB'

This was a great recipe! I'm always trying different banana bread recipes to find the "one" and this is almost it! I added about 2 tsp of cinnamon, 1 tsp of vanilla extract, 3/4 cup white sugar and 3/4 light brown sugar and ommitted the walnuts. I made 1 loaf and 12 muffins. Yummy!

Peanut-Ginger Marinade

This marinade was excellent! I didn't have the time to marinade it overnight, but I did have a couple of hours to do so. I look forward to marinating it overnight, I'm sure it will be even better!

Fruit Dip II

I got this recipe from my neighbor. This is so easy and yummy! I served with apples, strawberries, honeydew and canteloupe. It is also good with the chocolate graham sticks! My 2 yr old loves it!

Easy Lemon Bars

I usually use a different recipe for lemon bars, but I wanted to try something new and a little different. After reading other reviews, I also added more lemon juice. Overall, I just didn't care for this version. I like the idea of using cream cheese, but I didn't like the the packaged cake mix. I brought them to a party, and they received good compliments.

Taco Salad I

I had two parties in two days, so I made up a double batch. I cooked the meat mixture the day before, divided it in half and refrigerated it. I also used bagged salad. Day of the party, I reheated the meat mixture just until warm and mixed all ingredients together when ready to serve. It was a hit at both parties. I've already been asked to bring it to another party!

Baked Pineapple Casserole

I've never had anything like this. It was pretty good. It could be eaten as a side dish or dessert. I also used 1/2 cup sugar and it was sweet enough. Next time I will also decrease the amount of butter. I used wheat bread instead of white, since that is all I buy and it tasted good. Next time I make a ham I'll be making this!

Spam Musubi

On our 7th trip to the Hawaiian Islands, we finally tried Spam Musubi! It is "ono"! I have to say I only used this recipe as a guideline. I made a few changes. I marinaded the spam in teriyaki, and cut nori into 1 1/2 inch strips. I also bought a musubi mold, which I got in Maui, but you can buy them online. Dip mold in water before molding each musubi, it will make removal much easier. Also lay a piece of plastic wrap on flat surface, lay nori on top, center mold and fill with rice then spam and then rice again, press. Remove mold, wrap seaweed around rice and wrap in plastic. I gave my sister two musubi's to take home...one for her and for her husband...she ate both! Mahalo!

Famous Butter Chicken

I was looking for a quick to prepare, easy and tasty chicken breast recipe and have definitely found it! My husband and mother-in-law raved about how good and tender the chicken was. My almost 2 yr old had her share too! I didn't have any Ritz crackers, but used Reduced Fat Town House crackers instead and it still came out great. I also melted half of the butter, poured it over the chicken and cut up pieces of the remaining solid butter and put around the chicken. I'm definitely going to put this in my rotation of dinner recipes!

Aloha Chicken

I decided to try this since we've been to Hawaii a half dozen times and I also had all ingredients on hand. I wasn't too impressed. The chicken was very tender, but like other reviews, the cider was a bit much. If I did decide to make again I would decrease the cider to 1 tbs. and also decrease the amount of ketchup. I recommend serving over white rice, since the flavor is a little bold.

Spinach Tomato Tortellini

Very yummy! I used a smaller package of tortellini instead of the 16 oz package and I liked the amount of sauce, there wasn't too much. It was very quick and easy to make. My husband even liked it. He's not a big fan of "cheesy pasta" as he calls it! I will definitely make again. Thanks!

Awesome Carrot Cake with Cream Cheese Frosting

This is the first time I've made carrot cake from scratch and it was so easy and good! I also used 1/2 cup oil and 1/2 cup unsweetened applesauce, and used 1 3/4 cup of sugar. I omitted the nuts (I wanted to let my 11 month old sample it) and I didn't have a can of crushed pineapple so I used 1 cup of the natural style unsweetened apple/pineapple sauce. I might just use it again! For the frosting I used just under 2 cups powedered sugar. I was skeptic to try just one cup, but the next time I make it, I'm going to use 1 cup, since it was a little sweet.
