Easy and Delicious Chicken

This is one of my husband's favorite meals. I serve it over real mashed potatoes. It's great comfort food...any time of year!

Chicken Satay

When I told my husband I was making this recipe, he asked if there was curry in it and he turned up his nose at the answer, but I went ahead and made it anyways. He liked it! I marinated the chicken for 4 hours and it grilled up moist, not dry. I served with Best Peanut Sauce. I will definitely make again.

Best Peanut Sauce

This sauce was so simple to prepare. I used reduced-fat creamy peanut butter, since that was all I had. I served with Chicken Satay from this site.

Baked Potato Soup V

Very thick soup! I used 5 cups 1% milk and 1 cup chicken broth, did not add bacon and used less cheese than recipe called for. Baked and scooped potatoes day before and that was a time saver the day I made the soup.

Asian Chicken Noodle Salad

I love this recipe! I have made it with and without chicken. To make it easier on myself, I used pre-packaged coleslaw mix. I also decrease the amount of oil. I alwasy get rave reviews every time I bring this to a get-together.

Amazing Chicken

I had to make dinner rather quickly, so I decided on this recipe. It was quick and easy to make, but I won't be making again. I used miracle whip and added garlic powder and grated parmesan cheese to bread crumb mixture to try to give more flavor. Chicken was slightly dry.

Ginger Glazed Mahi Mahi

I used ground ginger. I've never marinated mahi mahi before, but from now on I will! By marinating, I was able to cook the fish thoroughly and not be dry. I had my burner too high resulting in a slighty burnt taste on the fish and glaze, so be sure to not rush, like I did! I will also cut down on the balsamic vinegar, it was a little overpowering.

Cream Soup Base

Zippy Egg Casserole

Very good, quick and easy. Also made for my MOPS group. I like using croutons...a nice change. It wasn't as zippy as I thought it would be, but that was probably better. For myself and family, I'd probably used more pepperjack cheese.

Garlic Chicken

Southwestern Turkey Casserole

Very easy to prepare. It was very good...it tastes just like the enchiladas I make! I used some of my leftover turkey. I made two 8x8 pans and put one in the freezer.

Breakfast Pies

I made this tonight for my MOPS group tomorrow morning and I almost thought I was going to have to pick something up from the grocery store! I followed recipe exactly and the muffins spilled over to the bottom of my oven and my whole house filled with smoke! My husband and I split one and I will be taking them tomorrow morning. If I do make these again, I might try using pie crust. It won't puff up as much and spill out all the egg.

Apple, Cranberry, and Pear Crisp

Great fall recipe! I doubled the recipe since I have an abundance of apples and pears. The only change I made was to add cinnamon and nutmeg. I'll be making this again!

Down Home Macaroni and Cheese

Great recipe! It was simple to prepare. My husband doesn't like mac and cheese, but I do and our daughter does. It was a lot for just the two of us and we ate it as a main dish. I will be making again and probably cut the recipe in half.

Zucchini Brownies

Great recipe! These are cake-like, not dense and fudgy. The only changes I made was that I used 1/4 c oil and 1/4 applesauce and omitted the nuts. I omitted the frosting because it doesn't need it and I thought it would then make them "unhealthy" brownies! Just the recipe I was looking for to use up some more zucchini!

I took these to a party and everyone thought it was Nana's Apple Cake from a certain home party show! They were so good. I also added more apples, cinnamon and a little nutmeg. Very easy to make!
