Juicy Roasted Chicken

This chicken was excellent...moist and juicy! I was tempted to stray from the original recipe but, reading other reviews, I decided to stick to it, with the exception of using butter instead of margarine. While plating, my husband couldn't stop sneaking pieces! My almost 5 year old had three helpings! I knew then it was really, really good.

Bacon Cheddar Chive Muffins

YUMMMM! I made 30 mini muffins to bring to my MOPS meeting tomorrow. I baked for about 10-15 minutes. My family and I just had to each have one, since they smelled so good while baking. The outside was nice and crisp while the inside was moist and soft. It's a perfect breakfast food for me since I don't care for sweets!

Quick and Easy Chicken Noodle Soup

Quick and easy! I boiled my noodles separately and per other reviews, I cooked the carrots with the celery and onion. Great warm-up for those cold days!

Granny Kat's Pumpkin Roll

I've been making this recipe for years and I always get great compliments. I always make 2 at a time and freeze one. I recently made a couple changes...I use a 10x15 jelly roll pan and roll cake from the short end. You get a better pinwheel effect so it looks impressive. My 4 year old daughter prefers this to pumpkin pie!

Cheesy Potato and Corn Chowder

This was excellent! Using the country gravy mix gives it a great consistency. My daughter and husband ate it up! He wants me to put it in the rotation...and he never requests that!

Mushroom Rice Pilaf

I used fresh mushrooms since I had to use them up and a red bell pepper. I also used half brown rice and half white rice and double the recipe. The flavor was really good, but my rice wasn't fully cooked and let cook for longer than time suggested...about 25 minutes.

Mom's Zucchini Pie

I'm always looking for new zucchini recipes, so I decided to try this one since I had all the ingredients on hand. It turned out excellent! My husband and mother-in-law loved it. The only change I made was that I used a blend of cheeses...asiago, provolone, and mozzarella.

Seafood Pasta Salad

Simple and easy to prepare. I used red wine vinegar instead of white vinegar. Be sure refrigerate for a few hours or overnight...it's much better!

Sand Art Brownies

I received as a Christmas gift from my sis-in-law, reviewer CPHOGO, a couple reviews below mine. I don't know if it was the changes in the measurements of the wet ingredients or my brand new oven, but I had to bake them longer than 30 minutes. They were very rich, dense, indulgent and yummy. If I were to make them, I'd use 3 eggs instead of 2 to make them a little more cake-like, and omit the nuts. My family enjoyed them warm with a nice tall glass of milk!

Tater Tot Casserole II

So easy to prepare! Per other reviews, I only used about 1 1/2 cups of sour cream. I served for dinner with a side of green beans and it was satisfying. I plan on making for a MOPS side dish for breakfast.

Vegetarian Four Cheese Lasagna

My husband, who does very little cooking, made this for our cooking night with pumpkin being the theme. I helped him a little, but he did the majority of the work, except clean up :) He used canned pumpkin, instead of fresh and I wasn't able to find fresh pasta sheets. I would strongly recommend to slice the tomatoes, they were just way to big. I would also slice and quarter the eggplant. My husband wanted to give it only 3 stars, but I gave it 4, because it was tasty and with a few changes, it could be even better.

Pumpkin Bread IV

A very simple, easy, basic recipe. I like that it makes a lot! I made this bread to use in Ibby's Pumpkin Mushroom Stuffing from this site and it was perfect. I made one loaf pan and one 8x8 pan.

Ibby's Pumpkin Mushroom Stuffing

Once a month, we get together with my sister's family and have a cooking night with a theme. This most recent theme was pumpkin. This recipe intrigued me, so I just had to make it. I used Pumpkin Bread IV from this site. I made a few minor changes, all because it was what I had on hand or I couldn't find it in the store. I used white onion instead of red, white mushrooms instead of crimini, and used all dried herbs. I also added more chicken broth since my bread cubes were really hard. The dish was sweet and savory, definitely different, but very good. I would like to make again.

Kabob Marinade

I let marinate for 5 hours. I only had about 1/3 cup of soy sauce left, so that's all I used and I was afraid it wouldn't be salty enough, but it was. I also used 1/2 cup of olive oil, didn't miss the other half. I will use this marinade again. I might try it on beef next time!

Penne and Vodka Sauce

I thought this was excellent. My husband thought it was ok.(He ate the leftovers) I didn't have any heavy cream, so I used evaporated milk and it worked just fine. I also added fresh basil. I will be making again when my husband isn't home for dinner!

Chicken Breasts in Caper Cream Sauce

I felt like I was dining out when eating this chicken! I made a few changes/substitutions. I added sauted mushrooms to the sauce and used evaporated milk instead of the heavy whipping cream since I didn't have any, and omitted the lemon pepper b/c I didn't have any of that either! I also pounded the chicken so it would cook evenly and it also tenderizes it. I will make it again with the correct ingredients and mushrooms.

Marinated Flank Steak

I was only able to marinate for about 2 hours and it was good. I'm sure it'll be even better when marinated for 6 hours! Dinner guests enjoyed, even a picky 8 yr old and 3 yr old! Can't wait to try again.

Stove Top Tamale Pie

This was so easy and was awesome that I didn't need to use my oven! I did make some changes. I added onion, used black beans instead of kidney beans (didn't have any)and a can of drained corn. My daughter in addition to her 2 cousins, ate it up! My husband was also impressed at how good it tasted. The leftovers were good, too!
