Asparagus Quiche

I could eat this for every meal...and I did! I love quiche for breakfast. The only change I made was to use fat free half and half.

Artichoke Dip I

Divided the recipe into two pie plates. Baked one and took to friends house for dinner and refrigerated other and baked the next day for an Easter appetizer. Served with pretzel thins and rosemary & olive oil triscuits. Everyone enjoyed it!

Super-Delicious Zuppa Toscana

Just the recipe I was searching for. I used kale in place of the spinach, omitted red pepper flakes(2 & 6 yr olds were going to to eat it), half heavy cream and half fat free half & half, and I cubed the red potatoes. The entire family thoroughly enjoyed.

Chicken Florentine Casserole

I cut up 2 chicken breasts into bite size pieces and cooked on the stove top with a bit of olive oil. Next time I will use only 1 can of spinach...my kids and even my spinach-loving husband thought it was too much. I omitted the bacon. I served over penne.

Italian Sausage Soup with Tortellini

Made a couple of adjustments, since I used what I had on hand. Used 1 can diced tomatoes, dried basil, frozen green beans in place of zucchini and frozen cheese ravioli, that I cooked according to package and added right before serving. Cooked for 30 min as recipe stated, added parsley, green beans and cooked until crisp, tender...about 10 minutes. This soup was excellent! Will definitely make again and try the ingredients the recipe calls for. :-)

Butternut Squash Soup

This soup was so yummy! When I had planned to make this for dinner my husband told me that he does not like squash, so I told him he could heat up leftovers from the previous night. He decided that he would eat the soup and he loved it! The cream cheese is the key ingredient. I used reduced fat and only one package...very creamy and thick. I did not have marjoram, so my husband looked up on the internet and found oregano as a substitution. Looking forward to eating for lunch tomorrow!

Mom's Zucchini Bread

Very yummy! Family and neighbors enjoyed it. I made it healthy by using half whole wheat flour and applesauce. Update: I've made it even more healthy by replacing an egg with a mashed ripe banana, used egg substitute, decreased sugar to 1 1/2 cups, and used 1 cup applesauce & no oil. My daughters love it this way!

Blueberry Buckle

I had to bake longer than the recommended time, edges were dry, but center was perfect. My husband thought it was cooked perfectly. I used half wheat flour. It was very good and a great way to use up fresh blueberries.
