Real Strawberry Cupcakes

T-E-R-R-I-B-L-E!!!! My hubby had one and I had a half. I made 6 Texas sized cupcakes [cannot be bothered with little cupcakes] and they did bake up beautifully in 30 minutes. They were light and airy using the pudding mix. But after those positive points, it was all downhill. I even followed "naples" suggestion of the strawberry extract, which I had on hand, and omitting the zest. And, why does every cupcake recipe have cream cheese in it??? Wish I would have followed my own common sense and made just a simple buttercream/or vanilla icing. All we could taste was cheese....NO STRAWBERRY flavor whatsoever. What a waste! Actually, I doubt there is a strawberry cake/cupcake out there that actually tastes like strawberry. It's a very delicate flavor, not easily duplicated. Then to slather it in cheese flavor...YUK!

Fluffy Peanut Butter Frosting

Nice, fluffy frosting, however next time I will stay with my own ratios.......1/4 cup butter with 1 cup peanut butter. Mine tastes much more peanutty, which is the main reason to make peanut butter frosting. Mine comes out nice and fluffy as well, just maybe a bit more dense......more homemade like. NICKIE75'S is more like what you get @ the store......a lighter in both taste and density. To me, you just shouldn't need that much butter added to peanut butter.

Burger or Hot Dog Buns

OMG.....never met you Sally, but I love ya! This is a truly outstanding recipe for superb rolls - easy to follow/make, great crumb, taste, and heft. I am a novice @ breads, starting with the 5 minute artisan sourdoughs and progressing to partial mixer/partial kneading, and just recently got a machine. Actually, I prefer hand kneading, and this recipe gave me my first "epiphany"..... I finally got that ultimate "feel" of my hands on the perfect dough and it was heavenly! I opted to make larger rolls so I ended up with 9 baked for 17 minutes.....take a look, they are beauties! Thanks again Sally! And if I can create these, anyone can.

Sauteed Apples

Absolutely delicious and easy as well. Made EXACTLY as directed. We both can't wait to make again and serve over my homemade vanilla bean ice cream. But this first time, we enjoyed it as a side with roast pork, and shaved Brussels sprouts with pancetta.....perfect accompaniment. Thanks 356!

Cream of Coconut Cake

PERFECT! Now my official Coconut Cake [aside from Coconut Poke Cake]. The only subs I made was to add 2 tsp of coconut extract to cake batter as well as to frosting. I also LOADED the top of my 9x12 cake with tons of UNSWEETENED coconut which I just happened to have on hand. Soooooo delicious, moist, flavorful....it was hard not to eat more than one piece!

Baked Haddock

Delicious, easy, fairly quick......great for Lent! My only suggestion.....next time I would spray the fillets with olive oil to both crisp/brown since I used Panko. You can skip the butter that way as well.

Playgroup Granola Bars

Sooooooooooooooo good! thank-you so much for this phenominal recipe using healthy ingredients! Very easy to make and made exactly as written......great directions. I did use overlapping parchment so I could just lift out to cut.....if you do this however, grab one end and slide out onto your cutting board, so they don't crack....mine did slightly but easily fixed being they were still warm. I waxed paper wrapped them individually for my husband to take to work to eat on the run. Next time I will experiment with grains as well as other fruits, nuts, and perhaps mini chocolate chips. Thanks again!

David's Yellow Cake

Total agreement and Amen to Naples34102's comments on 8.7.08! This cake was PERFECT! I too have been cooking for about 50 years as well and this cake has it all....buttery flavor & dense crumb.... exactly what a good yellow cake should be. I too halved the recipe and frosted with Allrecipes peanut butter frosting. Very good, and a nice cake to adorn with various icings and a delicious vessel for fresh fruits as well. Thanks David!

I AGREE WITH ALL POSITIVE COMMENTS!!! I DID USE MY OWN REAL WHIPPED CREAM - 2 HALF PINTS OF HEAVY CREAM/1/8 CUP POWDERED SUGAR INSTEAD OF WHIPPED TOPPING AND FOLLOWED THE SUGGESTION TO MAKE A DAY AHEAD TO ALLOW FLAVORS TO MELD. A REAL WINNER......EVERYONE TOOK PLATES HOME!

Diabetic Dog Treats

My dog was just diagnosed with Diabetes. Food is her middle name-just saying the word outloud sends her into a frenzy. She absolutely LOVES Puperoni.......however, they have sugar; both regular as well as propylene glycol, so they have to go! I was hoping this recipe would solve the problem.......she liked them, but we shall see as time goes by. I followed others suggestion of baby food, using a 1-2.5oz jar of beef and I also used about 1 tsp of liquid smoke -----trying to mimic the smell of those Puperoni's. Like I said, she does like them, but unlike others, did not go crazy for them. Next time however, I will use a much smaller pan to spread the batter in......10x15 is way too large......they come out too thin. A ravioli/pastry cutter works well to cut them while still warm as well.

Panzanella Salad

I love Panzanella salad but this became absolutely ruined by using Balsamic vinegar. I am aggravated with myself for not seeing that. Wayyyyyyyyyyyy too sweet. Plus with the tomatoes, it becomes sweeter. Think [unlike I did, & use wine or cider vinegar instead]!

Three Bean Salad

This is not something I make, but thought it might make a good foil for the quiche I was making & it did. It was addictive, delicious, but...........waaaaaaaaaaaaay too much sugar! Happy that I heard the other "too much sugar" comments, cutting mine to 1/3 cup [Splenda] & next time, will probably only add 1/4 cup. I am a sweetoholic. The submitter states that the recipe makes a lot, & to me, that really isn't true, so maybe the amount of beans was meant to have been tripled, or at least doubled.......I can't imagine this with all that sugar!

GA Peach Pound Cake

Very good. I halved the recipe, used 1/2 c. Splenda with 1/2 c.sugar and 1/2 c. "Can't Believe It's Not Butter sticks for our health reasons. I baked for 60 minutes @ 325 & poured into an 8"x4" foil loaf pan.

Simple Scones

Sorry, although these were very good, they are still not the best, and my quest goes on. The best you can get are sold at a local gourmet shop near me in Kenmore, NY......if I could get the recipe, I would. I have driven there just to get one.....9 miles away, they are that good and I usually get them plain. However, they come to the shop parbaked and finished in the shop so no recipe. I did make these as many others did, using a food processor, & also used currants. They were easy, & very good, but still not my favorite.....the local one's are like "butter, sugar, flour, dropped down from an English heaven" to me! I may however, try to make these with cream or buttermilk instead of sour cream next time....maybe that's the difference in taste.

Authentic German Potato Salad

I'm not sure how authentic this was. German potato salad cubed? This recipe was too sweet. The true version has more balanced tart/sweet taste as well as a creamier texture....this was way to dry. Not much flavor either. I have a rule of never deviating from the original recipe, but this one needs a lot of changes. Will look elsewhere for an authentic version.

Meatball Sandwich

DELICIOUS! ALL I DID WAS TO DOUBLE THE RECIPE. ACTUALLY, THIS IS THE SAME AS MY MEATBALLS, BUT I USUALLY USE THE BEEF/PORK/VEAL COMBO-----THIS TIME IT WAS ALL BEEF. WILL USE THE REMAINDER WITH PASTA. I APPRECIATE THE REMINDER THAT GUYS REALLY DO LOVE MEATBALL BOMBERS.....I JUST USUALLY JUST MAKE MEATBALLS TO GO WITH PASTA.

Fiesta Meatloaf

I HAVE TO ADMIT, WHEN I SAY THE WATER ADDITION, I WAS SKEPTICAL, BUT I GUESS I AM ALWAYS ON THE HUNT FOR A NEW TWIST ON THE MAN FAVORITE MEATLOAF. WELL, THIS IS IT! ABSOLUTELY SUPER DELICIOUS! MOIST, TENDER, & FLAVORFULL WITHOUT BEING OVERLY MEXICAN FLAVORED. I AS USUAL, DID NOT CHANGE A THING ON THE FIRST TRY. AND TO BE HONEST, I WILL NOT CHANGE A THING IN THE FUTURE....PERFECT COMBINATION. I DID USE A WOODEN SPATULA TO LIFT THE MEATLOAF OUT SINCE THERE WAS QUITE A BIT OF GREASE [I USUALLY MICROWAVE MY MEATLOAF, DRAIN THE GREASE, SLICE, & RETURN TO MICROWAVE WITH GRAVY ADDED] BUT ONCE YOU LIFT THE LOAF UP, THE GREASE IS LEFT BEHIND. WILL PROBABLY BECOME OUR NEW FAVORITE MEATLOAF! THANKS SAMSNANA!
