Peanut Butter Bars I

I made the recipe as is and found the crust way too greasy and heavy. I am a huge peanut butter and chocolate fan, but this is missing the yummy peanut punch I love in a good chocolate peanut butter bar.

Shrimp and Grits With Kielbasa

I thought this was a great recipe - not complicated, but tasty. I added some chopped chard at the same time as the shrimp to give it a little health kick; the texture and flavor were perfect. The only other change I would make would be to serve the shrimp and sausage mixture over the polenta and not try to mix it all together.

Ziti Chicken and Broccoli

Meh. I made this a little healthier by not breading the chicken breasts, but it just seemed blah. I'm saving the recipe and will try dressing it up next time. It seemed like adding some lemon might give it more zing and lemon seems to go well with chicken and artichokes.

Flatlander Chili

I am actually allergic to tomatoes so had to rely entirely on feedback from others. I served this with grilled cheese to 10 people after we did a pumpkin patch and corn maze. Huge hit! The pot was scraped clean. DH tasted for me all day and his advice is to let it simmer for several hours; otherwise it tastes too much like tomato juice.

Harvest Pumpkin Cupcakes

Fantastic. These were a huge hit at my office - everyone was thrilled that they were actually pumpkin cupcakes. Light and fluffy like a cake with as much pumpkin flavor as a quick bread.

Homemade Chewy Granola Bars

I love these bars! I have been making them to put into my husband's lunch for several months now and he's a huge fan. The addition of the corn syrup makes them just the right consistency. I have gotten creative about substituting different dried fruits for the raisins, I often use flax seed instead of sunflower seeds and skip the wheat germ if I don't have it on hand. They are still great. I make this so often I've started putting the portions into greased muffin tins. This way there is no messy cutting; I just pop them out and wrap individually for lunches. Voila!

'Out of Salad Dressing' Salad Dressing

I was so skeptical when I read this, but had all the ingredients on hand so gave it a try. Fantastic! It is now my go-to recipe for salad dressing. I usually add whatever fresh herbs I have on hand (dill, parsley, cilantro, etc). Love this recipe.

Slow Cooker Beef Pot Roast

This recipe was great! Although my family loves pot roast, I normally find it a little boring. Adding the mushrooms and cooking for several hours made it both tender and very flavorful. I made two tweaks: I left out the tomato paste (I'm allergic);it was great without it. I also added some fresh sage to the herbs. I will use this again!

Pumpkin Soup

I found this recipe did not have much flavor - pumpkin or otherwise. For a nice, bland, creamy soup I guess it would be ok. I noticed a lot of reviewers said they did not really like pumpkin soup; I happen to be a huge fan and am always trying new recipes. This one could have used some harvest spices like allspice and a dash of cloves or some red pepper or curry powder - anything to give it some oomph. I won't be saving this one.

Marinated Flank Steak

Chocolate Banana Bread Pudding

This bread pudding set up well and had that nice creamy-but-not-runny texture you want from bread pudding. I never thought I'd say this, but there was too much chocolate. The melted chocolate clumped in places and overtook the flavor of the pudding making it so rich it was almost inedible. Another change I would make would be to mash half the bananas before adding. While I enjoyed the banana flavor, I think mashing half would give this recipe extra creaminess while adding a delicate banana flavor. Instead this tasted strongly of baked bananas - a flavor that can also be overpowering.

Easy Peach Crisp II

This was fantastic!! The crust is super rich, but my family thought that was great. I had fresh peaches so I just sliced up 6 peaches, mixed with 1/3 c sugar and 2 T lemon juice and let sit for 15 minutes. I also added cinnamon and allspice to the crust. So yummy!

These were fantastic. I was worried the ketchup would make the sauce too sweet, but it's perfect. I think next time I might add a little ginger for a bit of a kick, but they are super as is

Apple Hermits

This is the best cookie I've had in a long time. I generously substitute ing depending on what I have on hand. My current favorite is roasted almonds for the walnuts, craisins instead of raisins and a tsp of cardamom with a little less cinnamon. I just can't get enough of this little gem.

Roasted Beets with Feta

Wow! these were exceptional. I have been trying beets various ways lately and these are the best yet. The roasting combined with the nice dressing is just wonderful. I found I only needed 1/2 the dressing called for and saved the rest for my salad tomorrow.

Coffee Marinated Steak

I used this marinade for stew meat. I floured and browned the meat. Oh my goodness! the meat tasted fantastic and the tough stew meat was very tender. I will use this over and over.

Easy Oatmeal Cookies

This cookie is great. It reminds me of a lovely spice cookie my grandma used to make. I think next time I might use allspice or mace in the cookies to give them even more zing. I used spelt flour for the wheat and honey for the sugar. Although I try to avoid butter in my baking, I think these would be even better with butter instead of oil (everything is better with butter). For the reviewers who thought these weren't cookie-like, I think they just haven't eaten enough variety of cookies. These cookies are cakey in texture, but I have many favorite cookie recipes from childhood that have the same texture.

Foolproof Rib Roast
