Lemon-Pepper Salmon II

I've been meaning to reviews this recipe for ages but I'm only getting around to it now. Wow! Absolutely delicious! The only thing I had to do a little differently was add lemon juice and fresh pepper because I didn't have any lemon pepper seasoning. I don't think it makes a big enough difference to render my review pointless:) My husband isn't crazy about salmon and really only likes it blackened, so he was very unimpressed when I said I had cooked it differently. Well, he absolutely raved about this:) I didn't want to broil it so I did what someone else suggested and cooked it in the oven for 18-20 mins at 400. They were very thick pieces, though, and cooking time could probably be reduced for thinner pieces. One tip I would give others, since the sauce is so thin and completely runs off the fish, is to keep it face down in the sauce for about 30 mins or so before you cook it. I always feel it lets the flavor soak in more. Excellent, simple, quick recipe. It's now in the regular rotation:)

Garlic Mashed Cauliflower

This was very tasty:) I've tried all kinds of variations on the SB Diet mashed "potatoes" and this was the best so far. I'm rating 5 stars for the recipe as is, but I added some chives and cooked a package of baby spinach which I then added to the mix.

Penne with Chicken and Asparagus

This was so very delicious. Hubby thought it needed a bit more liquid, so I'll just add more chicken broth next time. We both thoroughly enjoyed it, though. So easy, too! I followed someone elses suggestion and added some mushrooms. I'm very glad I did.

Pork Tenderloin Marinade

While this made the tenderloin incredibly moist, it was a little too salty for my taste, and I used reduced sodium soy sauce. My chef husband, however, thought it was fantastic:)
