Pork Supreme

This recipe exceeded my expectations. I had leftover pork loin & was looking for a way to use it . Based on other reviews, I only used 1 medium onion. I sautéed the onion & added a clove of garlic to some olive oil. I used some salt & pepper as I added each layer. It smelled amazing, even before I made the gravy. I almost did not add the tomato sauce, because the gravy looked so good. I only used a generous pinch of brown sugar. It all came together very nicely. I let it simmer for a bit, and added some water as it thickened. I had a small amount of sour cream & added it at the end, just before serving. I served it over rice with some steamed asparagus. My husband went back for seconds. I will make this again & maybe not even with leftover. It would be great with beef or chicken also.

Stuffed Pattypan Squash

The recipe looks and sounds really delicious. I had a number of squash in different sizes from the garden. Once they were fork tender, all went downhill fast. If I do this again, I think an ice bath would work great to cool off the squash. The squash were too soft & too hot to handle. I had many seeds, that I was trying to pull out of them, as the flesh was disappearing. The squash ultimately fell apart and were a big mess. I had bacon cooked & onion in the skillet, so I turned this mess into a pasta dinner. I added back to the pan what I salvaged, some white wine, chicken stock, parsley, and garlic. It was edible. My husband said it wasn't the best thing I ever made, but it was good. I like the idea of the horizontal slice, and may try that next time. I also think I will under cook the squash, so it is not as soft. This may be operator error, but the seeds were not addressed in the original recipe.

Banana Oat Muffins

The muffins were still very good. They did not rise up over the tin, so maybe leaving out the soda was not a bad thing. My bananas were very ripe, so the muffins were very sweet. I could have cut back on the sugar. They were very moist. I did not use the topping. Honestly, I was not in the mood & it is easier to freeze them without a topping . The only substitution I made was whole wheat flour for the white flour & added some chia seeds. In most recipes, I find the flour interchangeable . The muffins were not greasy at all. The next batch, I will experiment with leaving more of the oats whole, less sugar, & add the soda! My husband thought they were great!

Strawberry Bread

I read the reviews and made the suggested adjustments. This bread was excellent, especially after sitting overnight. I double the berries to 4C. I mashed up half with some sugar, & left half sliced. I also added some of the sugar to the sliced berries. I cut the total sugar down to 1 1/2 cups. I added a snack size applesauce & reduced the oil to 3/4C. I cut the cinnamon in half also, per suggestions. I used walnuts, since that is what I had on hand, & baked in a bundt pan. I thought that was an excellent suggestion. I baked it for approx 65 minutes. After cooling for about 20 minutes, it came out of the pan beautifully. I sprinkled with a little powdered sugar. I took for the ladies at my Pilates studio today, & it was a big success!

Chef John's Blueberry Muffins

Really Really good. I am one of those that has to change a recipe. I added vanilla, coated the berries in part of the flour to prevent bleeding. I don't use much white flour any longer. I used 2C whole wheat flour, 3/4 cup white flour, & 1/4 cup of ground flax meal. Topped with a sprinkle of sugar before baking. Most muffin recipes, I only get 10 or so muffins. I got 12 regular size & 18 mini with this recipe. My husband can't stay away from them. So yummy. I love recipes where they can be a blank slate for different ideas. This is a winner.

Banana Muffins II

These muffins were a nice change from banana bread. I did use whole wheat flour, add vanilla, & cinnamon. Very moist & tasty. They tasted very much like a banana muffin. I hand folded the wet & dry ingredients. I may add walnuts to the next batch.

Pasta Fazul

This was very good. I wanted more of a soup, so I added another can of tomatoes and the juice. I also used some chicken stock to thin it out. I added some crushed red pepper. I also cooked the macaroni separately. Lots of Parmesan . Served with cornbread, this was a most satisfying meal.

Classic Bran Muffins

I made these muffins with no changes the first time. I did add some walnuts. They were fantastic . The next batch, I tried the healthier options of applesauce , & less oil. I cut back on the brown sugar also, & used some honey.These did not work so well for me. My husband noticed the difference. They were drier & the texture was off. I am sticking to the original recipe. It is healthy enough!

Banana Oatmeal Cookies

I appreciated the changes I saw others had made to this recipe. I knew I would not care for it otherwise. I used butter, 1/2 brown sugar & 1/2 white sugar. I also used 1/2 whole wheat flour & 1/2 white flour. I omitted cloves. My batter was too soft, so I added more oats. They came out great. I also got way more cookies than expected. They are a yummy soft cookie & was a nice alternative to banana bread.

Easy Mexican Casserole

Cooking is an art not a science. I rarely make a recipe as written. This was yummy. I used black beans as suggested, added white onion and my own taco seasoning to the browned beef. Corn makes a nice addition. My sour cream was green, so I used greek yogurt as a substitute. I like the idea of sour cream on the side. This is easy & quick to pull together.

Banana Crumb Muffins

I have made several batches now and they are a big hit. Needed a change from bread. This time I substituted whole wheat flour for 1/2 of the all purpose flour. My family cannot tell the difference.
