Slow Cooker Potato Soup

This recipe is exactly what I needed it to be: a basic foundation, with instructions, for a thick and creamy potato soup. I added chopped celery and carrots, and I substituted the chicken bouillon with a can of cream of chicken (it was all I had). Also swapped out the milk for some heavy cream since I like my soup thick. I definitely recommend adding your favorite spices...potato soup is normally pretty bland, so it can't hurt to add more salt and pepper, maybe even some garlic, if those suit your tastes. Garnish with sour cream and cheddar and you will be in heaven. This will be a must on St. Patrick's Day. Thank you for this recipe!

Buttermilk Pancakes I

I followed this recipe exactly but tweaked it a little to add some flavor. I always add cinnamon, nutmeg, and vanilla to my pancake batters and it has always been a favorite of my family. However, I have never had pancakes come out so perfect and fluffy like these did! It was my first time making buttermilk pancakes and I can't believe what a difference it makes versus pancakes without buttermilk. I highly recommend this recipe, but add some spices to give it a nice, subtle flavor.

Baked Asparagus with Balsamic Butter Sauce

The first time I made this was about a week ago and my family loved it! I have never been particularly fond of asparagus, but I was eating this like it was candy. Instead of using cooking spray, I used corn oil (or olive oil, both work) and I poured it directly onto the baking pan, about 2 tbsps. Then I put the asparagus on top of the oil and moved the pan back and forth like I was sifting, coating the pan and the asparagus at once. As for the balsamic dressing (which is the gold of this recipe!) I basically eye-balled my measurements according to my tastes, I like balsamic vinegar, but I didn't want it, or the soy sauce, to be too overpowering. Wow, it came out perfect! Thank you so much for sharing this recipe with us!!
