Fluffy Pancakes
These were very good and they were nice and light. A word of warning, this recipe do only makes about 5 average sized pancakes. In my hurry to whip up another batch, I didn't let the milk and vinegar sit before adding in the egg. That made a HUGE difference in the texture and "lightness" of the final product. Don't rush through this recipe, give it time for the science to do its work and you won't be disappointed. If you're feeding more than two adults, you might want to just double the recipe from the beginning.

Honey Oat Beer Bread
I made this recipe tonight exactly as written with exception to my baking vessel. I made muffins instead of a loaf. I had to bake them for 45 minutes so I would imagine it would take at least that to fully cook a loaf as well. Besides that, it was an excellent bread. The taste was not too sweet, and not bitter at all. My family all loved it and we have some picky eaters for sure. I used a can of light beer from the grocery store and it was excellent.

Fresh Southern Peach Cobbler
This cobbler is very good. I almost didn't make it because it looked like a lot of work but it really wasn't so bad. The only thing I would change, I think is to reduce the cinnamon/sugar sprinkled over the top to 2 tsp sugar and 1/2 tsp cinnamon. Other than that, definitely a winner. Thanks for sharing your recipe.
