Lemonade Cake II

This was a delicious cake! The only thing I was confused on was the lemonade. There ARE NO 6oz cans of lemonade in my area. But with all the talk of the sugar, I decided to use just half the can, and cut the sugar to 1/4 cup. Made the glaze nice and tangy. But then, I second-guessed myself, and decided that they MUST be talking about the WHOLE can of lemonade, so I added 1/4 cup of sugar to the remaining 6oz, and poured that over, as well. NOPE! 12oz is just TOO MUCH glaze for this. But it's STILL very good, and moist. I also noted what someone else suggested, and heated the lemonade so that the sugar would dissolve into it.

Mint Buttercream Frosting With Dark Chocolate Glaze

Funny, I was looking for a good frosting for a chocolate mayonnaise cake, and saw this and decided it would do. And THEN I read Brenda's description of the recipe. PERFECT! But, instead of doing the separate glaze, I decided to just go half on the last two ingredients, so I used just 1 unsweetened chocolate square and 1T of butter. I added this to the frosting, and skipped the final 2T of milk. LOVE IT!!

Baked Potato Soup

This was FABULOUS! I DID add 4oz of Cream Cheese to give it a little more creaminess, but my picky eater had two bowl fulls! Will DEFINITELY make this one again!

Swiss Chicken

This was delish!! Except that 2 cups of bread crumbs seems to be VERY extreme - the family didn't like that part, so I will cut this down in the future. I also changed it up and included 1/2 a soup can full of heavy cream along with the water. Although it was "soupy", there was a lot of gravy in the end, which was perfect over rice. I also used 2lbs of chicken pieces, cut into chunks, and baked for about 35 minutes. My Swiss Cheese layer was just slices to cover the entire dish, which only took 7 slices. (I got to eat the 8th slice - YUM!) Overall, it was a very simple dish, and one I will make again.

Angela's Awesome Enchiladas

I must say that these were appropriately named! My little family of 4 ate over HALF the PAN in just the first sitting!! My daughter is coming over with her boyfriend, and I doubt that there will be any left after THAT! I was concerned about FLOUR tortillas instead of corn, but this is the first real batch of enchiladas I've ever made, and they were WONDERFUL! NEXT time I make these, however, I'll allow the chicken/taco seasoning mixture to simmer while I heat up the soup/sour cream concoction. DEFINITELY a keeper! Thanks, MomSavedbyGrace!! It's a winner in OUR home! :)

Iced Pumpkin Cookies

I will try this one again, using it step by step. I doubled the recipe, used 1/2 brown & white sugars, and added about 1/4 cup more pumpkin, because that was the rest of it. (Silly to see it go to waste). I DIDN'T have problems with the cookies flattening out, because of the add'l pumpkin. ALSO, Pampered Chef Stoneware and a #50 Cookie Scoop gave me just the right mount of cookies. I baked them for the full 20 minutes. I also added mini chocolate chips to half the dough. As I stated earlier, I'll try these again and see if I get a fluffier texture, like I was expecting. I had these types of cookies before, but maybe it was my modifications that made them different from what I was looking for.

The Best Meatloaf I've Ever Made

Easy Chocolate Cake

I must say that I was disappointed in the end result. The cake, itself, turned out big and full. But it was not as sweet as I was expecting, partially due to the addition of the cocoa/evap milk that was cooked and added in, but didn't have sugar mixed in with it to begin with. Also, the frosting tasted like nothing but thick condensed milk. I may try this again, when I'm looking to experiment a little, and use another reviewer's idea of putting chocolate mints on top of the hot cake and allowing those to melt to make the frosting instead.

Apple Betty

I don't know why people are complaining about the way this thing looks! You're just serving it up and putting whipped cream or ice cream with it! I used Braeburn apples, which were WONDERFUL! I have a NON-Pumpkin eater in my home, so she LOVED this! It was delicious, I must admit! Thanks for sharing this recipe!

Awesome Sausage, Apple and Cranberry Stuffing

As the dressing for my very first Thanksgiving Dinner, this was SO DELICIOUS!! I got nothing but RAVES from my family, who doubted I could ever come CLOSE to comparing to Grandma!! They were absolutely LOVED IT, and I'm GRATEFUL!! I did add about 1/2 pound of sliced mushrooms, which added moisture. I also don't stuff the turkey; I baked it, instead, in a dish until the top was crispy. Wonderful!!

LOVED this recipe. Took as a side for our Thanksgiving dinner, and made it again to take to another family dinner the following week. Had to double the recipe the 2nd time, and there was nothing left! I loved the way the saugusage and the bell peppers played off of each other and the almonds. I didn't know you could buy frozen chopped onion, but we just chopped up an onion. Great recipe! Thanks for sharing! :-D

Chocolate Caramel Brownies

At LAST! A friend gave me this recipe years ago, and I lost it! I found that using between 1/4-1/3 cup evap milk in the caramels made for a richer, less soupy, caramel sauce. I also doubled the recipe, added coconut on top of the chocolate chips, and baked it in a 1/2 sheet cake pan -- there was hardly anything left after our family dinner. As for the topping, I just got in and had fun, pretending I was playing in the mud like I did as a little girl, as I dropped little globs of the remaining cake/milk/butter/pecan mixture on top. (Note: Wash hands THOROUGHLY before this last step)!

Chicken Kisses

This was great! Added sliced baby carrots and substituted red and yellow bell peppers for the green. Found that spraying the foil before loading the ingredients really helped it release from the foil. I'm anxious to try this again, adding pineapple.

Cornish Splits

I've found my roll recipe! So easy and quick! I was skeptical about the small amount of yeast called for, but they were light and fluffy. I doubled the recipe and mixed/kneaded the dough in my Kitchenaid mixer (speed 2), which did a beautiful job. Family loved them, too!

Lemon Glazed Cake

I have been searching for this recipe for quite some time, now. VERY similar to one of my aunt's recipes. DELICIOUS!! Only changes I would make is that my cake took only 35 minutes to bake, and don't add the tablespoon of water to the glaze unless absolutely necessary. My glaze was very runny, and pooled around the edges and ran down the sides of the cake, too. Although the outer pieces that got the extra glaze were very tasty, too! :o)

Banana Oat Muffins

This recipe was great, although it does need nuts in it. Quick and easy. I made mini muffins (bake 10-12 min.) and they turned out beautifully!
