Eggplant Parmesan II

This was a very good dish! Thank you! The only changes i made was the amount of eggplant used (i only cooked this for myself, so i used one eggplant) and the spaghetti sauce (i used a spice pizza sauce out of a pizza kit, which added to the flavor). I was surprised by how good I made this! Im sharing it today with my co-workers! Thanks again!

Pumpkin Dip

So addictive!!!!!!!!!!! I only made enough for me so i scaled down the recipe alot. The only changes i made directly was instead of pumpkin pie spice i used ginger and nutmeg as someone else suggested and low fat cream cheese and fresh squeezed orange juice. I loved it with my granny smiths! thank you soooooooooooo much!

Raspberry Oat Bars

This was great though I made a few changes.....whole wheat flour, no butter- raspberry low fat yogurt, and I cooked raspberries n strawberries with brown sugar, tblsp of margarine n cinnamon. Very yummy! Thanks gave me something good 2 do with my raspberries!

Chocolate Chip Breakfast Cookies

I stuck to this recipes as directed, with the help of my god-son. These cookies were soooooooooooo good! It helped that they were healthy and tasty my god-son and fiance' who are both picky eaters loved them.....but i ate the majority!!!!!!!!

Peach suprise

I also added a picture of strawberries and cottage cheese with a light brown sugar, cinnamon and butter mixture. As you can see this recipe can be tranformed with various other fruits it peaches are not your favorite.

Playgroup Granola Bars

This is the first granola recipe i tried (excluding the wheat germ) so to me its like to foundation for ALL the OTHER creations ive made since. Thank you so much because it was easy enough and I had all the ingredients in my cabinets/fridge. They are very tasty and i usually add flax seed in it as well.

Stovetop Granola

I made granola but only with what i had on hand. so i did not follow the recipe to the fullest....i cooked the oats for about 15 minutes because they didnt seem to get as toasty as i needed them until than. I than took a nice piece of peanut butter/chocolate fudge id recently gotten from the board walk and melted it down and poured it over the oats and added dried cranberry and cinnamon! I ate it over plan life cereal and i loved the taste! I also saved some for a snack n it was very good cold/dry for snacking during the day! Thanks for the start I love having fun with oats!

Eggplant Snack Sticks

I did not use the egg sub or egg (or wheat germ) at all... i just threw the sticks around in olive oil and sprinkled the seasoning on them (which i added a lil plain bread crumb to). I broiled them longer than 3 minutes each, probally about 5 - 6 and they were a lil crispy. The tomatoe sauce was spiced up with a little hot sauce and cayenne pepper and garlic. Very good idea...it felt like i was eatting french fries, which i havent ate in years so when i get the urge...i will cook again...thanks

Mimi's Eggplant Casserole

Not 4 because i changed it a little to what i had lying around...instead of cream of mushroom i used cream of celery and as others suggested i used corn bread batter, for which i spiced up with a lil cayenne pepper and cinnamon. Overall I really liked this...i didnt know what to expect but i was very nice and make good left overs!!!!!!!

Easy Lemon Cookies

I absolutely adore this recipe! Very easy n tasty..I was eatting more than i made (they were not supposed to be for me, lol). Very good....i like to make them for pot lucks as dessert n during church events to sell. I dont change the recipe @ all...thanks

Blueberry Zucchini Bread

My first time making zucchini in a bread and Im addicted! Very good, though of course i added more of my favorite spice cinnamon! It was very good...i shared it with co-workers and they also loved it! Thanks! Will make again!
