Beef Stew III

I just got done serving this to my family, everyone but the 2 year old loved it! The 2 year old is super picky so it will take about 5 times of serving it before he will even try it. My 4 yr old ate it all by himself, sometimes we have to beg him to eat, but not this stew! I did add 1/4 tsp of dried minced garlic, which would be about 2 medium cloves, but that is becuase I had 3 lbs of meat instead of just the 1 1/2 the recipe calls for, and I also used 4 TBS of oil instead of just 2 due to the amount of meat I used. I will definately make this again!

Kelsey's Favorite Stuffed Green Peppers

I agree with what a few others have said...the original recipe is a little bland. But that might be good if you have children who do not like spicy food! The second time I made this, I added in 1/2 tablespoon minced garlic to the rice when boiling and used 15 oz jar of pizza sauce when I realized I was out of tomato sauce. I also added a bit of cumin, and italian spices to the mix after it had simmered for 10 minutes. Also, I mixed 2 cups of mexican shredded cheese into the meat mixture after I let it cool for about 2 minutes, then I spooned it into the pepers and baked for 30 minutes. Everyone loved it, and even my very picky 9 yr old said it was even better than the first time we had it. I have a 2 and 3 yr old that are pretty picky about their food, and they even ate the peppers when the stuff inside was gone, that alone is worth an extra star to me!

The Most Easy and Delish Meatloaf EVER!

I use this recipe about once a week and even my very picky almost 3 yr old loves it. I do omit the onion flakes and chop a small red onion to add instead. I also add in a small chopped green pepper. I substitute 1/4 tsp of minced garlic for the garlic powder, as my family loves garlic in our food. I also add a small can of tomato paste and 1/4 cup steak sauce to add a little kick. To make up for all the added liquid I do put in an additional 1/2 sleeve of crackers to make sure it isn't too moist. Even with all the added stuff, it will still (barely) fit into a loaf pan, and for a family of 5 we still have about 1/3 left after we are done, even if 2 or 3 of us have seconds. It makes for great leftover meatloaf sandwiches! I do strongly recommend lining the pan with foil before cooking for an easier clean up! This meatloaf goes great with homemade mashed potatoes and a veggie of some sort, my family is odd we usually have a black-eyed peas/white hominy mix. With all the veggies in the loaf I don't feel guilty about all the starch in the side dishes!
