St. Patrick's Day Zucchini-Oatmeal Cookies

I had a friend give me some zucchini that I was looking to do something different with. Had a brunch to bring a dish to pass, but no time to make actual cookies. Doubled the recipe, added a few more shakes of cinnamon, and put it into 2 9 x 13 pans. Used regular oatmeal and vanilla granola from Trader Joes. Baked at 350 for close to an hour - started checking around 45 minutes. Turned out awesome. Somewhere between a cookie and bread, and very tasty. Not too sweet like a regular cookie Would definitely make again.

No Bake Chocolate Oat Bars

I changed it like others, but mine was even more different. I doubled the recipe, and cut the butter to 1 stick, then added non-fat plain yogurt for a little protein and moisture. The taste of the batter was amazing. The yogurt gives it a soft texture and nice taste, not greasy at all. It's a rich batter, but not heavy. Nice stuff!

Awesome Slow Cooker Pot Roast

Made this today. Put a couple changes - liked the idea of butter/flour/milk as one reviewer did instead of condensed soup. Added 2 med onions quartered in the crockpot and about 6 whole garlic cloves. Browned the meat in salt/pepper and olive oil for a couple minutes each side before putting it in the crockpot. Topped with the condensed soup subsitution, soup mix and beef broth. Cooked for about 9 hours - 6 on high, 3 on low. Served over orzo. Very nice, will definitely make again.. Thanks!

Chicken Tetrazzini IV

Made it tonight. Very rich recipe. Usually I try it as written before adjusting. Just a few adjustments this time though. I sauted fresh mushrooms (don't like canned) with a little minced onion first and set it aside. Boiled boneless skinless chicken breasts in chicken broth not water. When it came time to assemble it all I left the white sauce in the pan, mixed the chicken and noodles together, then spooned in the sauce. I sprinkled some plain breadcrumbs and shredded parmesan cheese before baking on convection for about 20 minutes. Very nice. Was a 'make again' from the family. I know it would be a big hit with a crowd.

Alaska Salmon Bake with Pecan Crunch Coating

Aside from a comment of 'oh that looks gross' from my son. One bite and he was hooked. I used a big salmon filet from Costco, cut it in half and used the measurements here, with the exception of the mustard. For that I only used 2 tablespoons. Some fresh from the hive honey thanks to a friend who is a beekeeper and we were in business. Very very tasty, not overpowering. Served with plain white rice; didn't need anything more since the salmon was flavorful enough

Plato's Dry Rub

Like everyone else, no MSG. Instead of the salt, I used garlic salt instead of garlic powder. Rubbed on pic o the chix and let sit for maybe 20 min. Grill was being serviced so cooked on convection then grill (when it was ready). Nice, very nice, thanks for sharing! Will be using again.

Pot Roast in Foil

I was a bit skeptical because I'm not a big cream of mushroom soup fan. I used the lower sodium/fat cream of mushroom soup, added celery, potatoes (whole not sliced), carrots and a little extra water. It was amazing. Didn't taste salty at all, only very flavorful. It's a keeper!
