Golden State Mushroom Soup
I JUST finished making this and am having my first bowl. It is delicious!
I halved the onion because I've never really been a huge fan, added two larger-sized cloves of garlic, and used half Crimini, half white mushrooms. I used skim milk, low fat sour cream, a quarter of the butter it called for, and didn't have any Chicken boullion so I just added a bit more chicken broth.
I made a double batch, and blended about a half of the soup after boiling to thicken it up.
I felt it was missing a little something so I added about 2 cups of shredded lite mozza, and it is simply scrumptious!
Will make again with my tweaking! :)
