Winter Fruit Salad with Lemon Poppyseed Dressing
Really liked this salad. I also reduced sugar a bit and increased Dijon as it was a little sweet for me. The dressing is fabulous and super simple to make. It's such a terrific tangy and cool summer side!

To Die For Blueberry Muffins
There is too much butter in the struesel. It melts into a crusty shell instead of a crumb topping. Filling to the top caused overflow, and the overflow burns onto the muffin pan before the muffins are done. There is too much struesel topping for eight muffins, also the muffin is crumbly and not dense enough to support the weight of a topping that is this heavy. I knew when I saw the batter it was not going to come together properly, and even more so when I heard butter sizzling when I checked on it at 20 minutes. Just didn't care for the way it came out, and I'm a pretty experienced baker.

Irish Soda Bread
I actually really like this. It was not the soda bread that I was expecting. It was denser, more moist, and sweeter than what I was looking for. Still, it was very good. We had it with beef stew and the sweetness of the raisins was lovely. I only used 1.5 cups of raisins and that was fine for me. Also I thought I had sour cream and it turned out that I didn't, so I added another 3/4 cup buttermilk and 4 TB butter in a pinch. I will make again for sure. Couldn't do the x on top as I like because it was not elastic enough, but it did have a sufficiently crusty exterior. I baked in a 9 inch cake pan. It took 60 minutes in my oven.
