Slow Cooker Potato Soup

Maybe it was my fault, (I did follow the recipe exactly) but I thought this soup was incredibly bland. I was looking forward to it ALL day while at work, and my husband and I were both disappointed in the lack of flavor. I added garlic salt and a few other seasonings to try to help, but it also never thickened properly. I would not recommend this soup, but it might be good by adding ham or something flavorful!

Not too bad! I would have preferred them a bit spicier. I also added tofu which changed the texture a bit, but I'd make them again.

Nikki's Creamy Crock Pot Potato Soup

A tasty, spicy soup, but (I suppose this is somehow my fault) I could NOT get it to thicken! Anyone else have this trouble? I added extra flour too, but still nothing.

Cherry Tomato Corn Salad

This sure was easy, but all in all, there wasn't much flavor to it. We liked it better when I used my own Roasted Tomato Basil dressing.

Chicken Ranch Pasta Salad

This was actually REALLY good! I found a great organic ranch dressing (by Drew's I believe) that I think really made this dish. I left out the squash and added onions, garlic and red pepper flakes! I served it warm the first night and then chilled it for lunch the next day. Great easy recipe for beginners like me! :)

Pizza Pinwheels

These were much better than I thought they'd be. I used all organic ingredients (besides the rolls) and turkey pepperoni instead of regular. I also added in red pepper flakes to the rolls for a little zing! Along with a salad, this made a great dinner for 2!

Bachelor's Creamy Pumpkin Soup

Wow. I cannot believe how delicious and easy this soup was! I did not have the cream so I used evaporated milk. I also added crushed walnuts on top. I will be making this all throughout the season. It was a hit! :)

Colorful Veggie Bake

On it's own, it was a bit boring. I used less butter and added garlic, red pepper flakes, tofu, and soy beans. I also used shredded cheese because I don't use processed cheese. I think that my alterations made it a 5-star recipe! :)

Egg and Spinach Casserole

This is a GREAT casserole that I have been making for my husband and I to reheat for breakfast throughout the week. It's a really easy way to get a nutritious, hot breakfast without taking the time to make eggs each morning. I did not use butter or salt, but added garlic powder and red pepper flakes for flavor. I also crumbled in a block of extra firm tofu. A great, healthy recipe that's easy to modify for variety!

Peppermint Meringues

These are an adorable holiday treat! Super easy to make (my first time making meringue) and easy to modify with sprinkles, cocoa powder, food coloring...etc. I didn't really have trouble with the meringue, but I did add a bit more sugar to make it stiffer. I also would prefer them a bit chewy, so I'll back off the cooking time next time. What a great recipe with minimal ingredients to suit ANY holiday or event!

Slower Cooker Meatloaf

Never again. Against my better judgment, I followed this recipe to a "T," and left my house in the morning dreading that there would not be nearly enough moisture in the pot. I came home to the dreaded smell of burnt, wasted food.

Zucchini Bread IV

Very good recipe, but I wish it was a bit healthier. I also subbed out 1 cup of zucchini for 1 cup of vegetable pulp from my juicer. I'd like to try to get away with less sugar next time.
